Fudge-Filled Irresistible Peanut Butter Cookies

I pretty much followed the recipe, though I did decrease the sugar by half a cup. I don't like things so sweet so they were perfect for me this way. I didnt have crisco, so I just subbed margarine. The cookies turned great- very soft. After my first batch I tried making them a bit smaller and patting them down to flatten before putting them in the oven. When sandwiched they are really big! The problem with making them smaller/thinner is they become more delicate. You might want to experiment a bit with the size. The fudge turned out great. I made it on the stove in a double boiler (afraid of burning the chocolate in the microwave). I added just a pinch of salt to the chips and condensed milk, as this is usually called for when I have made fudge in other recipes. Overall, really good and would be fun to do with kids.

Fruit Cocktail Cake V

I was looking for a fruit cake recipe and this came up in the list. I followed the recipe to a T and it turned out fine, but I find it a little strange. It tastes (and looks) like a big chocolate chip cookie with fruit cocktail mixed in. It doesn't taste bad, per se, but I don't think the fruit makes it more appealing or delicious. I think it might be interesting to try making it with white sugar instead, and maybe add milk instead of the fruit cocktail syrup. This way it would be more of a yellow cake with fruit mixed in.

Easy Batter Fruit Cobbler

Very delicious. I made it with peaches and added a little almond extract to the batter which gave it a nice added flavor. This is very easy, depending on what fruit you are using. If you have to peel and core, it will naturally take a bit longer. I don't think this is the most beautiful or sophisticated dessert, but it is a great thing to whip up quickly or to use extra fruit.

Flan de Coco (Coconut Flan)

Very nice. I substituted coconut milk because I didn't have evaporated milk on hand. I didn't put any coconut flakes in either. I made this recipe once before and followed it more closely. Both times it has turned out well. There is another recipe for flan on this site I enjoy more though. It adds cream cheese to the mix (which I'm sure you could do here). It is less authentic of course, but very creamy and less eggy in flavor.

Rum-Spiked Horchata

This was delicious, though I haven't had horchata in awhile so I'm not sure how authentic it is. I generally don't like to add alcohol to drinks that are usually non-alcoholic but I do think adding rum really enhances the flavor. I also added a little bit of honey and used short grained rice because it was all I had.

David's Yellow Cake

I'm not a huge fan of cake, but I love this one, particularly when used in the 'Fresh Strawberry Upside Down Cake' from this site. This cake is very moist and much better than boxed. I followed the recipe other than not sifting the flour (don't have a sifter) and I used the entire egg. I used all-purpose flour because that's all I had available. I was careful to add eggs one at a time and alternate flour with milk when mixing. I think this may be an important step, as suggested by other reviewers.

Fresh Strawberry Upside Down Cake

Definitely recommend using fresh strawberries and experimenting with the jello flavors. I make the yellow cake from scratch using David's yellow cake recipe on this site. I love eating this with a little bit of vanilla ice cream on top.
