Cheese and Broccoli Chicken Soup

Very good recipe! Kids loved it, too. Five star-taste; 4 star directions. Really, the directions should probably instruct you to make the roux: gradually add the stock (soup base much better than boullion cubes) whisking constantly to remove lumps; then add other ingredients. Easy and delicious. I suspect that using the roux as written would give you problems with lumps. Love the addition of chicken to broccoli soup! I decreased the cheese a bit and still wonderful.

Fluffy White Frosting

I had already used canned white frosting in between layers of a three layer 9 inch round cake and planned on using some canned strawberry frosting for a pink cake. I changed my mind immediately after tasting it...yuck!!! So, not enough butter for buttercream led me to this. I followed this recipe with the addition of a bit of lemon to the sugar syrup. Boiled for nearly 7 minutes. Added a touch of almond and a few drops of coloring. It did take a while to reform the stiff peaks after adding the syrup. But they did peak in my stainless steel bowl and Kitchen Aid mixer...VERY well (probably after 7 minutes; but I went ahead and continued for 10 minutes). The frosting was very stiff and so pretty. Easy to spread, but I wouldn't wait long) I am not a talented cake decorator, but I could make this frosting smooth on the top (well...smooth enough for my purposes...not wedding cake smooth) Made enough for the outside and would have probably been enough for in between the layers as well. Lovely little cake. Simple to make. Mine had a tiny bit of tartness (b/c of the lemon I suppose)and was light and not-so-sweet. I covered and put it in the fridge for tomorrow.

Zippy Shepherd's Pie

I have five kids with few individual dislikes...but altogether it's challenging to fit all tastes. I dont like to make casserole-ish type dinners much..but sometimes schedules demand it. AND finding a one-dish recipe WITHOUT cream of this-or-that is difficult. All my kids love this recipe and it's really not all that unhealthy as most casserole-type-dishes tend to be (depending on your meat and how you prepare the potatoes). Admitedly, I reduced the curry, though. I also pile in the veggies and pile on the potatoes. Pretty quick preparation. Thanks!

Cheeseburger Soup I

I did not change any ingredients, but I did roughly triple the recipe, leaving the amount of cheese at about 2 cups, and the butter/flour at 6T/half cup respectively. Both times I have made this it has turned out fantastic. It's better with homemade broth vs canned (obviously) and real butter, and I'm sure would be great fully loaded (full amounts of cheese and butter), which I will do for company. After adding the flour/milk mixture, immediatley after it started to boil I added cheese and transfered to crockpot (I hate that grainy, curtled milk texture) to keep warm. Added sour cream just a bit before serving. Thanks for a recipe that all seven members of my family enjoy! Oh...a little bacon garnish is nice, too.

Chicken Spaghetti III

I tried this recipe due to time constraints and what I had on hand. I think the value in the recipe is that it's quick to put together and kids will probably like it if they have a taste for processed foods like most kids do. However, as one could probably guess by the ingredient list it does taste pretty much like queso mixed with spaghetti. I guess I prefer to REALLY love something that is this unhealthy. :) So for me, too much like junk food to stand as a main dish. 4 stars because kids like it fine, quick to prepare and fine for a once in awhile meal. I do think there are better, fresher chx spaghetti recipes, but they do take longer to prepare.

Tomato Soup I

I made this for a large family celebration. Because it was for company I used real butter and the heavy cream. Fantastic. Impressive. Wonderful. Many compliments. However, for an "everyday" soup I will still use the butter, but try whole or even 2% milk. I did simmer the soup on the stove for nearly an hour, transfer it to crock pot for a few hours and added the cream I had warmed in the microwave about 30 min. before serving.

Beef and Walnut Stew

I really enjoyed this recipe and so did my kids. I did not have tomato juice, but I used an 8 oz can of tomato sauce and added water. I also served it over rice only because I thought my kids may enjoy it more.

Breakfast Casserole II

I wanted to like this more than I did. I do prefer potatoes instead of bread in a breakfast casserole..it's a texture thing. However, the recipe as is was a bit bland and pretty dry. Perhaps a few more eggs and a little more kick? I did not see anyone else comment on dryness, so maybe I over baked it (I have a phobia of undercooked egg casseroles...again the texture thing).

Dill Wrapped Cream Cheese

This was a great appetizer. My guests LOVED it. I took the advice of one reviewer and cut down on the dough a bit...actually I wrapped the cream cheese kind of like a package and used a little of the extra dough cut in strips to decorate it like a ribbon. CUTE and tasty!
