Pork Tenderloin with Herb Sauce

I have made this twice - once using a large tenderloin and red wine vinegar and the second time two smaller tenderloin using apple cider vinegar. The first one was FANTASTIC. My second attempt was not even worth mentioning (other than I don't want to do it like that again). The herb sauce is a perfect compliment to the pork loin. Thanks for this great recipe!

Graham Cracker Pie

I chose to bake my crust prior to adding the filling. Also did a meringue topping. Used a strong vanilla my Aunt brought from Mexico...wonderful!!!!

Honey Bun Cake

My family loved this cake - especially my 2 year old. I didn't have sour cream so I substituted lowfat vanilla yogurt, which added a great flavor. I will try it with sour cream next time. I also only had chunky applesauce, which added a great "surprise" to the cake. I had to bake this for 45 minutes.

Homestyle Potato Chips

Love 'em! Simple, easy & fantastic. We like our chips with seasoned salt & pepper on them and then dip the chips in ranch dressing. Delicious!

Jamie's Black Beans and Rice

5 stars with the following changes: One pot meal. In a large skillet, heat 1 Tbsp olive oil w/ 1 Tbsp butter. Add 1 cup uncooked rice, 1/2 cup green peeper, 1/2 cup red onion, 1/2 of a jalapeno & 1 clove minced garlic. Saute for 2 min. Add 2 cups water, 1 tsp cumin and 1 tsp salt. Bring water to a boil, stir rice, reduce heat, cover and simmer for 10 minutes. Add 15 ounce can of black beans (drained and rinsed) and a 10 ounce can of green chili enchilada sauce. Let simmer 10 min. Serve with sour cream and mexican cheese blend.

Microwave Corn on the Cob

Love the taste of the corn this way! I made 7 ears of corn, left the husks on them, piled them in the microwave, covered them with a single, wet papertowel and microwaved them for 15 minutes. Piled them all in a large basket to serve - husks still on. Looked beautiful on the table amongst the other fresh garden goodies. We pulled the husks off when we were individually ready to eat - amazing how easily the silk and husks came off! I'll never boil corn on the cob again.

Oatmeal Banana Raisin Coconut Cookies

Amazing cookie. I loved it as is. I also made some with craisins instead of raisins, loved those even more. Added roasted almonds to some as well, loved that. Also made a batch with chocolate chips instead of raisins, fantastic. Would be hard to choose which is my favorite. My kids on the other hand, didn't like any variation of it... they did not like the banana. Next time, I'll make a batch of "oatmeal chocolate coconut cookies". This recipe is a great base to make it with the flavors you and your family most enjoy. (I used 3/4 cup butter & 1/2 cup crisco, and quick cooking oats, perfect texture.)

Chickpea Soup I
