Best Cream Of Broccoli Soup

Very good but made a few modifications to meet my preferences. I added 2 tsp of salt with the broth, a cup of chopped carrots with the celery and onion, 3/4 c. shredded sharp cheddar, and substituted half and half for the milk. Even with these changes, the calories for a 2 cup serving was 400 calories. I ate this as a meal with a slice of wheat artisan bread from the grocery store deli. Delicious!!!

Beef Bourguignon I

This recipe was awesome! The flavor was outstanding and so worth EVERY detail. I think I have a new favorite dish. My only side note I have is that I didn't have any oil left in the skillet after I sauteed the vegetables. So when I went to add the flour, it turned into a paste. I ended up throwing that out and then adding a couple of tablespoons of the bacon fat to the skillet and starting over with new flour. From there, everything was fine. I served it over noodles with a side salad and cooked corn. What a great meal!!!

Hash Brown and Egg Casserole

This recipe is OK but overall it is missing something. The top layer of sausage and cheese was tasty, but the eggs and hash browns were dry and flavorless. I even used only about 1 1/2 lb of hash browns and I used 2 more eggs because I felt that a 2 pound package was way too much and it didn't seem that there were enough eggs to even notice. If I was going to make this again, I would add a can of cream soup and some green peppers or green chilies to the potatoes to make it more interesting. Also, I would suggest to not use fine shredded cheese and be sure to drain the sausage on paper towels before adding to the mix.
