I've lived all over the world which has given me the opportunity to try many different kinds of food. I prefer healthy eating and try to incorporate this into comfort food. I must be getting better in the cooking department because now my family prefers to eat at home more often than going out to eat which suits me just fine.
My favorite things to cook
Baking bread. Italian, mexican, and southern foods.
My favorite family cooking traditions
Everyone in the kitchen do their special dishes. I love baking cookies with my kids and try to involve them in the cooking process. The kitchen is the heart of my home.
My cooking triumphs
I'm working on some. My biggest triumph is a make a maccaroni and cheese that my family just cannot get enough of. They love it.

Too many and too painful to talk about.

Creamy Chocolate Frosting
This is an excellent quick frosting for cakes, brownies, or cupcakes. I made it exactly as written except I did add about 1/2 tsp. of salt. For some reason, in my opinion, this seems to cut the bitterness of the cocoa powder and brings out the sweetness instead. This is so much better than the tub frostings you buy at the grocery store. I used the amounts listed for a 13x9 inch pan of brownies. I doubled it for a 9" layer cake. It was wonderful and I'll definitely use this recipe again.

Cake Mix Cookies IV
This recipe also works if you use sugar-free cake mix. Because I'm a diabetic I'm always looking for a good diabetic friendly recipe. I used a sugar-free yellow cake mix and added a cup of sugar free chocolate chips plus a teaspoon of vanilla. The cookies were wonderful and much better than most of the sugar-free cookies in the grocery stores.

Old Fashioned Chicken Pot Pie
This is a good recipe, easy to fix, and great comfort food. I used a refrigerated pie crust. I also left out the thyme because I'm not fond of it. Other than that I went exactly by this recipe. I don't like it when others rate a recipe low based on their idea of the nutrition value of the recipe. I also don't care to read that someone liked it but made a few changes. Or in other words they made an entirely different dish with their 'few' changes. If you think this is too high in sodium you can use low sodium soups and leave out the salt. If you're not comfortable with that make something else for dinner.
