Strawberry Mojito

Very delicious, and very much appreciated by friends at our backyard BBQ. I didn't measure out everything perfectly, but used this recipe as a guide for the ratios I should pour. I put the ingredients directly into a glass pitcher. I ripped apart the mint leaves so they were big enough that people wouldn't swallow, but not huge leaves floating around. I used lime juice instead of limes, although I if I make again, I'd prefer fresh limes. I also found that if I muddled the mint and sugar together first, then added strawberries and mashed them into the sugar and mint that the flavor was best. On one batch I forgot to mash the strawberries, I just threw them in with other ingredients and the loss of flavor was noticeable.

Satiny Chocolate Glaze

Simple and very easy. I microwaved in ceramic dish (15 second intervals) stirring with a chop stick and it worked very well. I also added some almond extract which gave it a very nice flavor.

Lime Cilantro Rice

This was a great side dish for a BBQ we threw where we were cooking several different kinds of marinated meat. It looked pretty and it was light and refreshing.

Apple Crisp II

It was delicious, the only critique I'd make is for the crust to meld together and get crispier. I took a few reviewers suggestions and doubled the crust making a bottom and top layer. I didn't alter the water, however I did mix Granny Smith apples cinnamon, nutmeg, and sugar and water together, let set together while mixing ingredients for the crust. In my opinion, it would have been too dry with less water.

Summer Beer II

This is good, although I think beer margaritas are much better. I used raspberry lemonade concentrate, used water and added sprite to dilute the alcohol since the taste was very strong. I also added fresh raspberries and mint. I highly recommend making it ahead of time and sticking it in the freezer and making a slushy out of it.

Asian Salad

Very tasty, went nice with an Asian themed BBQ. I modified recipe as suggested by others by cutting down oil and butter and adding water chestnuts. I also happened to have a chicken breast in the fridge that was marinated in a Thai peanut sauce that I ended up grilling up, chopping into cubes and adding to the salad.

Sausage Egg Squares

I used a gluten-free biscuit mix and did not add the green chilies, but aside from this stuck to the ingredients. This was okay, not phenomenal. If I were to do it again, I'd use less biscuit mix (maybe 1/2 cup), to make it less cake-y and more egg-ish (if that makes any sense).
