Pasta Poblano

Omg I just made this and it's SO good, but I did roast the pepper instead of boiling it [which is why I only gave it four stars]. I also made it low fat by using about 3/4 can of evaporated skim milk and a cup or so of fat free sour cream instead of the heavy cream. For everyone who says it's too oniony [with which I definitely disagree], maybe try cooking them just a little before pureeing. That would probably take away the remaining bite that cooking the sauce doesn't. :D

Outrageous Warm Chicken Nacho Dip

This was really good! I made a few minor changes [canned chicken, and then canned cheddar cheese soup because I don't like velveeta], and it came out great! My only issue was that I wasn't sure how much chicken to use, weight-wise, so I don't think I used enough. I also would have liked it to be more tomato-y, so I think I would use two cans next time. Other than that, it was really good! Served it with fritos scoops :]

Raspberry Lemon Muffins

I just made these and they might be the best muffins I've ever baked. I only made some minimal changes in that my liquid measurements weren't quite as exact--for the yogurt, I used a little bit over 1/2 cup and I used lemon chiffon yogurt because I couldn't find plain lemon and for lemon juice, I just juiced half a lemon instead of measuring out the tablespoon. I made them with strawberries and they were soooo good. I might try them with raspberries next time, but I don't know. The strawberries were pretty amazing. Thanks for this recipe!

I'm fairly certain that I made this right and if I did, it was soo liquory. It tasted good, though, over ice. I added some watermelon schnapps to my glass and it was delicious.

These were SO MUCH FUN to make. We used six colors instead of four and ended up with 25 cookies. They were adorable and delicious. I will definitely be making them again.

Apple Muffins

So, to make it taste more dessert-y, I melted the sugar with 1/4 cup of the apple juice and two tbsp of butter and brought it to a simmer. Then I let that cool and added it into the recipe at the end and baked as directed. It makes a crunchy crust on top. Mmmmmm. Without that, it probably would have been just as delicious, so all in all, this was a good recipe :]

White-Hot Hot Chocolate

This was soooo good. I also didn't use the egg because it scared me, but it is still AMAZING without it. I don't think I used enough cayenne, though, so next time, I won't eyeball it. I also didn't do well with the cinnamon garnish, so I think next time, I'll just use a cinnamon stick. And I only had red chocolate melts on hand from valentines day, so not only is it spicy, but it's red. Love it.

This was soooo good. I halved the recipe, but didn't half the liquid because otherwise, it was too crumbly. It was the perfect amount and I will DEFINITELY make these again!

Butterscotch Bread

I was looking for a simple dessert and found this. I was a little scared when there was nothing special about the recipe but brown sugar, but when I melted the butter/sugar and let it caramelize a bit like emiliano lee said, it was DELICIOUS. Anyone who says there's no butterscotch taste should try that. Mmmmm.

I just made this and it's lovely. I didn't add the orange peel, so I think I will definitely do that next time. I also didn't have any rum, but it's pretty delicious by itself. :]

Bearnaise Sauce

I halved the vinegar when I made it and it turned out absolutely PERFECT. To keep it from separating, though, Emeril Lagasse says to clarify the butter before adding it. I'll try that next time, since it was very hard to save the leftovers of this sauce :[

Taco Pies

I loved the idea. I used refried beans instead of ground beef and mixed in a packet of old el paso taco seasoning. The filling was delicious, I LOVED the crushed corn chip crust on top, and it was really nice with lettuce and salsa. I would definitely make this again.

Chile Rellenos Pie

Chile rellenos is my dad's favorite mexican thing, so I made this for him. He LOVED it. I did everything as is, except replacing the cilantro with flat-leaf parsley. It was delicious--not too spicy [which I liked].

I took the suggestions of changing the temperature/time and just eyeballed the chocolate chips and they turned out pretty delicious. I don't like regular brownies, so these were a really nice substitute. :]

This was delicious, though I think next time, I'll use more apricot preserves. For the russian dressing, I used Thousand Island. Everyone thought I was super creative, so thanks for the recipe!
