Quick and Easy Brownies
I cheated a little to make these great. I added some non dairy cream to help round out the cocoa. Only used 3 eggs. Used 1c wheat flour, 1 cup sugar and 4 sugar substitute packets. Turned out amazing! My hubby doesn't like nuts so, on "my" half, I put coconut, pecans and mini chocolate chips. Made the brownies even more amazing!!

Anisette Toast
I'll admit, I rarely rave about anything in life, but this treat is one to take note of!! I baked the toast on two different types of cookie sheets. The air cookie sheet provided a light blonde toast color. The regular cookie sheet provided a light toast color. Each colored toast had its own amazing taste. These were so simple to make and will please any anise lover!

Pepperoni Polenta Pizza
I found the trick in making the crust crunchy...while cooking polenta add about a tbs of olive oil and cook until very thick. Pour into a brownie pan (8x8?) and broil. The oil will crisp both sides of the polenta. I doctored the recipe by adding chicken broth and italian seasoning to polenta while cooking. Topped with a light slather of sauce, parma, fresh sliced mozzarella, chopped tomatoes, sauted onions, garlic, green pepper and some pepperoni. Finished with handful of cheese and a sprinkle of crushed red pepper flakes. The whole diced tomato did soften my crunchy crust. Next time I would avoid the seeds and pulp. Otherwise, it was FANTASTIC!
