I am so craving this so I’m making it this weekend. I also have a can of Rediwhip ready to go! I’m going to consider this practice for Thanksgiving which seems so far away to me. I just found out yesterday that my daughter is not that into Pumpkin pie and I have at least one friend that doesn’t MORE

About this Cook
I live in Michigan with my husband of 10 years and my teenage daughter. I've become more interested in cooking & baking after falling off the Weight Watchers wagon awhile ago. My daughter frequently bakes, my husband doesn't cook at all after showing me how to make some of his favorites!
My favorite things to cook
I like to bake alot in the fall and into the holiday season. We go apple picking at the orchard every year and I really enjoy turning those fresh picked apples into something amazing. Also, Jan Hagel at Christmas time.
My favorite family cooking traditions
My mom did not like or enjoy cooking. We didn't have much money so there was not a lot of good food, mostly just inexpensive convenience stuff. This unfortunately has caused me to believe that any recipe using a boxed mix is not a real recipe. It's just MY thing, there are lots of really good recipes out there that use boxed mixes, I know that!
My cooking triumphs
Finally figuring out that to infuse garlic taste into something, don't overcook the garlic. Also, I make homemade pizza with a pizza peel board and pizza stone. I worked at a pizza place in my younger years so I remembered all the tricks. My daughter is quite impressed and as anyone knows its hard to impress a teenager!
My cooking tragedies
Making a new recipe from a cook book with alot of ingredients and it turns out only edible.

Blueberry Zucchini Muffins
Really good and moist! I only changed olive oil to canola oil and halved oil using applesauce instead.

Creamy Potato Leek Soup II
This was very good! My husband ate it up and said it was the best potato soup I every made. I only had two leeks and instead of cream used equal parts of half n' half and 1/2% milk. Didn't matter, yum!

Overnight Coffee Cake
This was very tasty and it was very nice to just pop it in the oven in the morning. It did not say whether or not to uncover before baking, I did. Also, I have an oven that runs on the hot side. Adjusted it accordingly but it still was done in only 35 minutes.
