Chipotle Tilapia Tacos with Mango-Cilantro Salsa

This recipe was FABULOUS! My family loves spice so we didn't have an issue with the level of hotness; however, I wasn't able to find chipotle chile powder so I substituted hot chili powder. That was my one substitution. I will try light mayo next time as I will probably double the sauce, which was delicious! Only downside to this recipes is that it takes some time to put together, but don't let that stop you. The effort is well worth it.

Halibut Supreme

This recipe was delicious and looked fancy. I couldn't find halibut so I substituted grouper. It was still great, but I will try again with halibut. I also used a parmesan/romano blend for the cheese and doubled the cayenne because I like a little spice.

Classic Meatloaf

Made the recipe exactly as written after watching the video. It was perfect: moist, delicious and totally comfort food! Don't forget to make Chef John's mushroom gravy, its savory flavor is fabulous with this meatloaf!

This is my go-to recipe for ahi tuna steaks. Fast, easy and full of flavor. Don't overcook; a little pink in the center keeps the fish moist.

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

This is a fabulous recipe! I substituted a bag of baby spinach for the kale and just tossed it with the slightly cooled quinoa. Also upped the other veggies. Super delicious!
