New York Italian Pizza Dough

Amazing! I did it all by hand, which was really difficult at first (it's incredibly sticky), but in the end you end up with both delicious pizza and fab arm muscles, so who cares?

Tiramisu Cheesecake

This was amazing, but tasted like cheesecake and NOT like tiramisu. I used at least 8 tablespoons of kahlua, and if I were to do it again I'd probably go for 3/4 of a cup instead. I used spongecake and tore it up into little pieces since I couldn't find ladyfingers - worked well. I topped it off with cocoa powder, whipped cream, and strawberries - definitely a pretty looking cake.

Nutty Stuffed Mushrooms

Amazing! In order to ensure the mushrooms were juicy, I did two additional things: 1) I dipped them in balsamic vinegar prior to baking 2) I put chicken broth (was also cooking a chicken) in the pan before cooking and also drizzled the broth over the mushrooms once they came out of the oven. Furthermore, I substituted fresh basil for dried, and used a bit more cayenne pepper than called for to increase the heat. Delicious :)

Chicken Breasts in a Date, Caper, and Mascarpone Sauce with Couscous

Made this for ten people at a dinner party and served it over couscous with a Greek vegetable salad (tomatoes, olives, cucumber, bell peppers with a little oil and balsamic). It was such a hit! The sauce was a little thick and I wanted to ensure there was enough to go around, so I ended up adding a little 2% milk. The combination of the rich mascarpone, tart capers, and sweet dates is decadent beyond measure. Everyone loved the sauce so much - even my vegetarian friend (we spooned it over eggplant meatballs for him). Try this one out!

Red Chard and Caramelized Onions

I didn't have any brown sugar, so instead I added regular sugar, which worked out great - love the mix of sweet and salty. Also didn't have olives or capers, so I added chopped sugared dates. Delicious!! I also tried it again recently and added sliced almonds. Was perfect.
