Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Ran out of cumin so I threw in turmeric. This made it a little more middle eastern/indian but it was tasty! Next day mixed it with some egg noodles and feta and my daughter loved it!

Really, really good! Use plenty of oil and cook medium/medium high heat so as not to burn them before the inside cooks. My family ate them up!

Viva Madrid Spanish Chicken

Fantastic! My family is Spanish and this tasted like something you'd find in your local tapas bar. I substituted raisins for the dates, don't skip the "sweet" ingredient , the raisins contrasted well with the saltiness of the bacon. My husband and kids loved the recipe as written, okay my son just wanted to eat all the bacon but that's fine by me! Thanks for the great recipe!

Mexican Lasagna

So easy and very tasty! This is one of those recipes you think to yourself, " Why haven't I been making this for years?". My kids loved it too! I took another reviewer's suggestion of adding a layer of refried beans at the bottom. Great idea!

Chutney Chicken

So easy and sooooooo good! I used chicken legs in lieu of thighs and drizzled a little bit of olive oil on top before baking. Served with Israeli couscous and steamed green beans. Tasty!

Easy Chicken Korma

Fantastic! Super easy and tasty and my daughter even liked it! I used boneless chicken thighs instead of breasts and had to cook it for 50 minutes total. This will become a staple at our house!

Authentic Louisiana Red Beans and Rice

This dish smelled amazing as I cooked it but lacked a bit of flavor. Admittedly I omitted the cayenne pepper because I was serving this to my kids. I reheated the leftovers the following day and added some garlic powder, more cajun seasoning and salt and it tasted much better. Maybe not as authentic but more flavorful.

Chicken Breasts with Balsamic Vinegar and Garlic

I agree with other reviewers, skip the flour or use thin breasts and cook them with the flour coating separately. The coating got too mushy when it I cooked it with the liquid. The sauce was amazing, though, I would double it, though to have plenty!

I admit I didn't follow the recipe completely, didn't have wheat germ so I used more breadcrumbs and it tasted well....too "bready" The next day I pan fried the leftovers and they turned crispy and good!

Lebanese Chicken and Potatoes

The method used to cook the chicken is great! The meat came out moist and the skin crispy and flavorful. I agree with another review that said it was a bit sour. I added the full cup of lemon juice but next time I think half will be enough, the potatoes ended up a bit on the sour side because they really soaked up the juices. I also think this could be spiced up a bit, maybe some fresh parsley on top?

Yummy! Extremely simple and cheap to make and really good. It is a good base for a cream sauce to which you can add other veggies or shrimp or chicken.

Pollo (Chicken) Fricassee from Puerto Rico

Lacked flavor. Definitely needs some salt. Also, I like slow-cooker recipes I can throw together before work and then go. This one requires quite a bit of preparation. I probably won't make this again.
