About this Cook
I am a 46 year old mother of two beautiful sons, priviledged to have been able to stay home to raise them for the last 17 years. I am now taking some time for me to eat healthy, exercise and shed those unwanted pounds!
My favorite things to cook
I love to cook nutritious and delicious meals for my 'boys', using as much fresh, local and organic produce/meats/fish as my wallet can handle :-) I like to eat a lot of quinoa, berries, trout, salads....finding new and delicious healthy recipes that are also low calorie but packed with nutrients.
My favorite family cooking traditions
Roast dinner with raspberry pie for dessert (paternal nana). British breakfast with all the yummy (fattening!) things that go along with it :-)
My cooking triumphs
Learning to make fast and delicious meals for my boys sports (carb loading in a good way!) I make a super delicious pasta sauce for game nights. I am known for my yummy stews with dumplings!
My cooking tragedies
I CANNOT get pork chops right, no matter how many different ways I try it, argh! Always tough :( But I am great with a pork roast or tenderloin, thank goodness!

Baked Beans III
We love these beans! I have made them twice now. The first time, I doubled the beans but not the bacon and sugar, it was perfect and our dinner guests raved. My hubby says these are the best beans he's ever had :-) This time I did the recipe exactly as written, am just waiting to take them out of the oven and am sure they will be delicious. We serve these with a nice ham and scallop potatoes, what could be more comforting?? :0)

Chicken Noodle Casserole I
I made small adjustments to this to suit our family taste and I really loved it. My hubby was so-so at first, but the next day when he had the leftovers for lunch, he couldn't stop raving and wished he had more, haha! I did add a 1/2 cup to 1 cup of milk and slightly lowered the sour cream, I added in my Victorian Epicure chili garlic sea salt for flavor, I did add the sharp cheddar shredded cheese layer under the topping, yum! I used 1 1/2 cups crushed ritz crackers to 1/2 cup butter for the topping, it was my favorite part! This is rather 'rich' and not low fat, of course! But it's nice to have some 'comfort' food like this once in awhile, after having fish and asparagus all the time! Enjoy! I think this would appeal to children quite a bit...my little guy seemed to enjoy it, my older son did not like the topping (not sure what's wrong with him, lol!) but enjoyed the rest.

Award Winning Chili
Excellent, with authentic chili flavor, or so said my guests:) I did add in a can of navy beans, as well as the kidney beans, black beans would also be great. I used HP sauce instead of Heinz 57, and also used a yellow pepper in place of the green, as we aren't big green pepper fans....it was just delicious and was gone very quickly at my party (before the vegan chili, which was also very good). Will make again.
