Low Carb Jambalaya

Reviewed: Jan. 11, 2013
Really good! I forgot to buy the Zucchinis so used Bok Choy instead. Turned out really good. Only suggestion would be to cut back on the Cajun Seasoning if you are not a fan of spicy food, I am however and loved the kick!

Famous Butter Chicken

Reviewed: Jan. 3, 2013
The only reason I did not give this 5 stars is because I had to make a few changes. First I added a few dashes of hot sauce to the eggs to add flavor. Instead of garlic salt I used poultry seasoning. Lastly, I cut the amount of butter down to 1/4 of a stick. My (super picky) brother's LOVED this!

Made this for Superbowl Sunday and was a huge hit! Put it ontop a bed of lettuce to look like a field. Will make again! Easy and great!

Broccoli Chicken Divan

Reviewed: Jan. 25, 2011
My mom used to make this when I was younger. I made several changes. In between the layers of broccoli and chicken I added a layer of sautéed mushrooms. I used a can of condensed mushroom soup instead and mixed it with 1/3 cup of mayo instead of milk. I mixed the cheddar cheese in with the soup and mayo and added two dashes of Louisiana Hot Sauce. Then I put the mayo, soup, and cheese mixture on top of the chicken. Baked for 30min. Crumbled the bread crumbs and butter on top. Baked for 10 more min. AMAZING

Chicken in Mushroom Sauce

Reviewed: Nov. 3, 2010
This was good! I made a few changes. I used spray butter instead of vegetable oil and added a can of mushrooms to the sauce. I served it over white rice. Next time I am going to sauté mushrooms and onions with the chicken

Simple BBQ Ribs

Reviewed: Oct. 18, 2010
These ribs were amazing!!! I made them for my fiancé and he at them all up, no leftovers! After reading some reviews about the ribs not having much flavor, I made a few changes; I used 2 tablespoons of garlic salt instead of the salt and garlic powder. I also added an onion to the water. I boiled the ribs for 45 min and baked them for and hour fifteen. I flipped the ribs halfway through baking and added more bbq sauce. They came out very tender and flavorful! Will defiantly make these again!!!

Spinach Stuffed Chicken Breast

Reviewed: May 6, 2010
Made this tonight for my boyfriend who loves any meat wrapped in bacon. We both loved this. I used shredded cheddar cheese because thats what was in the fridge. I also used frozen spinach, again, because thats what I had at the time. The bacon made this chicken extremely flavorful and tender. I will definitely make this again, but maybe try another type of cheese like the pepper-jack or mozzarella.
