This was a perfect meal to make for a Sunday dinner. It took only a couple minutes to throw together and then I didn't have to think about it while it cooked. It is also very healthy. I recommend it for anyone on a diet or for vegetarians. There are a couple things I did differently. I used green peppers instead of red, I added crushed red pepper, and got rid of the bay leaves, salt, and hot sauce. Although a much simpler version, it still had a wonderfully spicy flavor and great texture because of the beans. Next time I am adding hot sauce because my husband said he would like to try it.
