My favorite things to cook
I have been cooking since I was a little girl, always inspired by my grandmothers and my father. My mother was not a fan of the kitchen but she had 2-3 dishes that nobody has been able to duplicate to this day! Her Lasagna, Homemade Cannolis (shells and filling) and Sicilian Cassata Cake which she altered to fit our families love of chocolate w/a chocolate & coffee bean frosting! :). I love cooking and am the top cook in my family. I'm always looking to try new recipes. But I would really like to start baking more and try new things. I just bought myself a KitchenAid mixer this year, so hopefully that will be my starting off point to inspire me to try new baking recipes!

Shrimp and Asparagus
I made this without the mushrooms (because I didn't have any) and with only 1/2c butter (1stick) because I though it would be too fatty/rich. It was awesome! If I had some white wine I would have added that as well. Next time, however, I will probably nix the butter or use less of it, to try to make it healthier. Maybe then would be a good time to add the wine! I gave this 4 stars because of the amount of butter the recipe calls for, I don't think that much is needed.

Mushroom Chicken Parmesan
I was looking for something a bit different and this seemed like a great twist on a favorite. It came out absolutely amazing! I used the sauce to top macaroni as a side - it was mouth watering! I posted my pic of this dish as well. Next time, however, I will just use an egg wash and cut the cream out, need to take the fat n calories down.

Annie's Strawberry Dessert
I like the quickness of this dessert & the idea of chopped pecans in the crust, but crust was flavorless, and the cake part was way too sweet, I went ahead and made fresh strawberry glaze which was the perfect amount of sweetness instead of ready to use which I thought would have been too sweet. Next time I will add sugar to the crust like other mention and I will only use 1/2 to 1/2 cup confectioners sugar.
