Rhubarb-Raspberry Crunch

Excellent! Perfect right out of the oven over icecream. I could not find "instant tapioca" at Kroger so I used instant cheese cake pudding instead. I've made this twice in 7 days and now have to let my rhubarb plant recover. I also used organic oat flour instead of all purpose flour with no issues.

Ham and Sweet Potato Salad

This is fantastic, there is a lot of flavor in this salad! I think it would works well on the South Beach diet too! p.s. 20 minutes was too long to cook the sweet potatoes. Also, you could use canned pineapple instead of a whole one. It was very difficult to cut the fruit out.

Potato Chip Chicken Casserole

I used cream of celery soup instead of cream of chicken since I didn't have any celery at hand. Both my kids (6 & 14 yrs) liked it.

Crumb-Coated Chicken Thighs

Easy to make, husband, 7 yr old and 15 yr old all LOVED this recipe. Goes great with acorn squash on the side. Making in again (two times in two weeks!)

Asparagus and Crab Salad

The directions were hard to follow. DO NOT put the tomatoes in the oven with the asparagus, unless you want really mushy tomatoes. I modified this and added cilantro, the juice of a whole lemen and did not put use the hearts of palm or the bacon. Cut the maters in half so they are easier to eat.
