Banana Cake VIII

I found this cake, dense and moist, which is a pleaser. I was disappointed with the topping. I used pecans as some other users had noted and found that the pecans kinda burnt, not bad, but a bit. Neither the chocolate chips, nor the sugar melted and I even covered it with foil in the last 20 minutes to prevent it from burning. If I make this again, I'll put the choco chips IN the batter and add some butter to the topping and cut it like you would the topping for an apple crisp. I also used 8 bananas and used coconut oil instead of margarine or butter. I used yogourt instead of sour cream and cut down on the sugar. The cake was perfect!!! The topping was a little off, all in all, still a crowd pleaser.

Never, Never Fail Pie Pastry

I decided to try this pastry as my first attempt at pastry!! Wow! I was impressed. I have always watched my mom and sister struggle with the pastry at every holiday and decided I'd stick with what I was good at. I wanted to try it this year and stumbled upon this recipe. I had no issues with it, it was PERFECT! I used butter and shortening instead of lard and it was still amazing. I made a second batch and added the liquid before I cut the shortening/butter in and it STILL worked. That's a miracle pastry. In my opinion, thats what this should be called - Miracle Pastry!!

Chewy Peanut Butter Chocolate Chip Cookies

I made these cookies based on the other rave reviews and made them gluten free! They worked wonderfully! I cut down the butter and increased the peanut butter, also used natural peanut butter. I cut the flour down as well as I always find gluten free to be heavier as it is, and so are most peanut butter cookies! I also substituted agave nectar in place of corn syrup and they still turned out awesome!!! Very happy with them, gluten free can be tricky, but these cookies passed the test!

Pumpkin Muffins II

I made these gluten free!!!! Although, I made these muffins with a lot of changes, I mainly followed the recipe as a guideline! If you can bake, you can alter these and have them come out fantastic! I didn't have fresh pumpkin so I used a can of pure pumpkin, and didn't have quite two cups so I subbed in applesauce. I subbed the white sugar for organic raw sugar and cut down on that by about 2/3 of a cup and increased with MORE applesauce. I wasn't done there with the applesauce, I also replaced the oil with applesauce!!! I used all the spices so you could get more "autumn" flavour. I wanted to make them hearty so in my gluten free flour blend I also used ground pumpkin seeds, ground flax seeds and ground oats. I used 1/4 cup un-ground rolled oats as well. This recipe does make 24, not 12. I made 12 without a topping and 12 with a topping. The topping was AMAZING and turned the muffins into more of a dessert than a snack. I made the topping with rolled oats, walnut pieces, demarara sugar and coconut oil. I wanted to keep this recipe dairy free so I didn't use chunks of butter like you normally would in a crumble type topping. I got the most rave reviews out of any other muffin I've ever made!! People that don't eat gluten free, dairy free, said they were hands down, the BEST muffin they've EVER HAD!!!

Peanut Butter Chip Chocolate Cookies

Honestly fantastic! Sooo easy and super delicious! Any time a recipe stands up under gluten free, natural ingredients its a keeper!! And that drop the cookie tip - amazing!!! Anyone who didn't rate it five stars, needs to give it another shot..... really... sooo good!

Zucchini Yogurt Multigrain Muffins

Delicious muffin! It should be known, that I always rate based on how well the recipe does being transformed to GLUTEN FREE! These held up pretty good considering. I did a lot of similar alterations like other users, less sugar, less honey, less yogourt, less oil, more applesauce, only zucchini, no carrots, etc. I think the only reason I couldn't rate them five stars is that they should NOT go in liners. They were very good, but not oily/fattening enough to come out of a liner. I will definitely make these again though, this time with greases tins instead :)

Coconut Oatmeal Cookies I

AWESOME cookies!! I subbed in my gluten free all purpose blend which worked wonderfully. I also added a cup of raisins and subbed in lemon extract instead of vanilla. I used two teaspoons, instead of one for lemon extract and they were perfect. Everyone raved about them. A perfect, sweet and yet tart cookies!

Cheesy Buffalo Chicken Dip

Hands down thee best appy EVER! I used white cheddar cheese so it had more of the sharp zing you would expect in a buffalo wing and I also added cayenne pepper powder because I didn't find it quite spicy enough. This is always a hit at every function I've ever made it for. I have a hard time actually getting it to the event, because I want to eat it all by spoonfuls! AMAZING!
