Neapolitan Cookies

These cookies taste very good! A few tips: - Make sure you really push down and smooth the first layer of dough on the bottom of the pan to create even layers - Don't try using foil to line the pan - it creates ridges - Use a very sharp, thin smooth knife to cut the dough and maybe use a ruler to really understand how REALLY thin 1/8" cookies are, otherwise your baking time will vary.

Green Beans Amandine

Excellent and easy - loved it! I doubled the recipe for a big crowd and bought the pre-cut, pre-washed bag of green beans. Sooooooo easy. Takes up no space and no time, yet looks elegant and tastes great.

Easy OREO Truffles

Good recipe - easy to follow and ingredients are non-threatening/easy to find. A word to the wise. I'm not great with baking that requires complete attention. This does! The part where you cover you Oreo "meatball" in chocolate. A few hints: as you melt the chocolate, stir constantly and stop as soon as all of the stuff is melted - even a smidge before you think it's totally done. Use a slotted spoon and drop the cookie in and pour the chocolate over it. Move quickly or else the chocolate cools and it's like walking in quicksand. The toothpick thing didn't work for me and was discouraging in the beginning - despite chilling the stuff it didn't stay together and "muddied" the chocolate. The spoon method was much, much better.

Twice Baked Potatoes II

Potatoes turned out great. Wonderful flavor. I baked the potatoes the night before to cut down on time the next day. Next time I think I'll microwave them. ONE TIP - when you scoop the potato out of the skin, leave enough of the potato to form a protective "shell" so you don't break through the skin of the potato. My boyfriend liked them so much I caught him sneaking the leftovers out of the fridge and eating them cold!

Cheesy Meatloaf
