Simple White Cake

To Die For Blueberry Muffins

Great recipe. Moist and delicious. I swapped the veg. oil for coconut oil and it gave them just the slightest coconut flavor. I do have to admit though, that I made them in mini form instead of the jumbo size. Having 4 kids they'd just blow through 2 muffins without coming up for air so, the mini size will make it easier to portion out. It also gives the parents a fighting chance at getting a couple;).....maybe!

Roast Sticky Chicken-Rotisserie Style

This was great! I did as directed except I used less salt and I made the run into a paste w/ a little olive oil and schmeered the birds. I also bought 2 7 lb. chickens so we would have some leftovers. So, I ended up roasting them for 9 hours and they were wonderful. I am glad I cut the salt because I think they were just a tad salty (for my own taste, so I'll cut a bit more) but, not so much so that they were not good. The chicken was moist and tender. I will be using this recipe over and over again. I also chopped some potatoes and carrots and added those about halfway through and they got the flavor of the drippings and were amazing. I actually had to stop my son from eating all the potatoes! And, as stated more than once the drippings make a delicious gravy.

Best Big, Fat, Chewy Chocolate Chip Cookie

Yummmmmmm. These were a very different tasting choc chip cookie to me but, a GREAT different. I'm saving this recipe for ever. Thank you for such a simple treat. As we speak my kids are crying for another cookie!

Chicken Noodle Casserole I

I also made some of my own changes. First, instead of boiling the chicken, I pan fried it with olive oil and butter, poultry seasoning, thyme and garlic. Then I deglazed the pan with a little bit of white wine. Added the soup to the pan and a can of milk. I didn't have the egg noodles so, I used thin spaghetti. I chopped up a head of broccoli (very small pieces) and added that and frozen peas to the mix. Then I topped with what I had, Cheese crackers and pats of butter. Extrememly delicious:)

Broiled Tilapia Parmesan

I actually didn't read the recipe correctly and brushed the mix on before cooking and it was still DELISH! I subed dill for basil and omitted the celery salt and it was wonderful. I would recommend a little more of the mixture though as I didn't get to completely cover all of my filets with the mix but, I will be making this often. Even my husband said it was tasty!
