I am a vegan chef working for a health and wellness company in Worthington, Ohio. I have worked hard to regain my health after years of being over weight. To date, I have lost over 160 pounds and I feel great.
My favorite things to cook
I eat a lot of bean, grain and vegetable dishes using recipes from all over the world. Oil free stir fry's are my favorite quick and easy meal
My favorite family cooking traditions
Unfortunately, my family does not eat in a very healthy way, but I used to love getting together with the whole family for the holidays.
My cooking triumphs
Learning how to cook without oil has been my hardest cooking challenge. But each tablespoon of oil you eliminate from a recipe is about 130 calories you get rid of from the dish.
My cooking tragedies
I used to own a bakery and have several wedding cake disasters---just ask. My favorite is delivering a wedding cake to the wrong wedding.

Three Olive Spread
Delicious, very similar to a tapende. I leave out the oil and add fresh basil.

Tomato Basil Soup I
I am vegan so I used vegetable broth and I didn't use any oil so it was fat free. I also use fresh herbs whenever possible.
