Delicious Apple Dumplings

My husband has been making these for years...another recipe on this site called Country Apple Dumplings. Only difference is this one calls for vanilla extract, which he added any ways. Regardless, a family favourite. Yum

Shrimp and Crab Bisque

This was a big hit with both my clients and my husband. I too sauteed the onion, with some garlic, before adding the called for ingredients. Also added some scallops, along with cooked potatoes and carrots - which made for a hearty meal. Served with warmed Naan bread. Yum Yum...definitely a keeper!

Winter Root Vegetable Soup

I served this as a starter for a 5-course meal on New Year's Eve...so for simplicity sake, I placed all the prepared vegetables in my roaster, along with the onion, 4 cloves of garlic, canola oil, and the seasonings. I roasted them @ 350F for 2 hours, stirring once every 25 mins. I then placed the roaster on my stove top, scraped down the sides with a whisk, and while adding the vegetable broth...I pureed it with my hand-held blender. Instead of adding the cream, I served it with a dollop of fat-free sour cream. Although my guests begged for seconds, I made them hold off until after the 5th course was served. Needless to say I ended up sending them home with the left over soup.

Pork, Apple, and Ginger Stir-Fry with Hoisin Sauce

In a word - "Delicious!" Only addition was that I sauteed some sliced carrots, bean spouts and snow peas with the broccoli. It made for a very full serving over Basmati rice. Thanks for the keeper Jenny!

Banana Crumb Muffins

I love this recipe because firstly, you will always have the ingredients on hand, of course, as long as you have ripe bananas! And secondly, because no matter how mad someone is at you..you just pop one of these muffins in their mouth and they instantly love you! Yes..they are that good!

Meatloaf with Fried Onions and Ranch Seasoning

My son doesn't like meatloaf! He loved this!!! In fact, so much that he wants me to make him a Guitar shaped Meatloaf cake for his birthday! (He doesn't like sweets either). I only made one addition...mixed 1 tbsp HP sauce, with 1 tbsp ketchup and 1 heaping tbsp brown sugar and spread it on the meatloaf for the last 10 mins. of baking.

Banana Split Cake I

We were first introduced to this recipe at our family reunion in 1995..and my husband made it as soon as we got home. He substituted the graham wafers with Orea cookie crumbs and only beat the "butter cream mixture" for about 10 minutes in total. We have made many "summer" desserts, but this is still his favourite.

Penne Russo a la Vodka

My husband is not a big tomato fan..but this is one dish I will make for him again. Only thing I changed was I used a can of cherry tomatoes. Think I will use the recommended ingredients next time. But overall this was a great dish!

Fettucine with Heavenly Salmon Sauce

My husband has sworn off shrimp linguine, so this was a great substitute "fish with pasta" meal. I added some chopped asparagus to the skillet in the first step, along with some mushrooms. I also grated some fresh parmesan cheese, and added fresh ground peppercorns. Definitely a dinner we'll enjoy time and time again.
