These are AWESOME! We try and eat as many beans as we can, to save money, and this is a great alternative to the normal soup and chili. I made these with some dry beans that I had cooked the day before. I made them with shredded carrots instead of the peppers, we hardly every buy fresh peppers in the winter, but they were great! The carrot adds a good texture and blended well with the color and flavors. Oh, and I added a tsp of salt, since I cooked the beans without any seasoning.Served with mayo, lettuce and cheese on a folded flour tortilla, they were a hit! Even with the ardent carnivore at the table! Will most definitely be making these again!
