Brioche

Reviewed: Nov. 8, 2011
Amazing!!! Made this by hand... easy but time consuming. Will definitely start first thing in the morning next time lol. Mine came out perfectly golden brown, slightly crispy on the outside, moist inside. Delicious with blueberry preserves!

Easiest Focaccia Recipe

Reviewed: Nov. 1, 2011
I just tried this recipe, and I added a lot of things so that is why I am only giving it 4 stars. Its a great start but had room for improvement. After reading the other reviews I added in 1 tsp salt, 1 tsp dried parsley, 1/2 tsp garlic powder, 1/2 tsp rosemary and about a tsp or 2 of olive oil to the dough. While it was rising I poured about 1/4 cup of olive oil into a small saucepan and turned it on to low, I added one crushed clove of garlic, and 1/2 tsp dried rosemary. After 30 mins I did not knead the dough on a floured surface, I just kneaded it in the oiled bowl for a minute. After putting it onto my baking sheet I poked holes into the top and brushed on the olive oil that I infused with garlic and rosemary and sprinkled a decent amount of course kosher salt all over. 17 minutes was the perfect baking time for mine. I guess I did not spread it out enough on the pan because it came out a little thick, but I cut it into strips and it makes the perfect breadstick. We are having it with a grilled chicken salad for dinner, but I tasted it and its delicious :) Thanks for the recipe!

D'Amaretti Biscotti

Reviewed: Oct. 29, 2011
This is the first time I tried making biscotti, I didn't know how it would turn out but I used half wheat flour, and splenda instead of sugar. I also left out the toasted almonds because I didn't have any. I was very nervous when shaping the loafs, it seemed very crumbly. They came out perfect though! A little plain but I blame that on myself for not adding something else in since I didn't have almonds. My husband (who normally hates anything almond flavored) even liked them.

Grandmother's Buttermilk Cornbread

Reviewed: Oct. 26, 2011
Thank you so much for this recipe! My daughter and I just made it to go with the chili we are having for dinner tonight. I used white whole wheat flour, splenda instead of sugar, and I didn't have buttermilk so I used a substitute. It came out so gorgeous! I tried a little piece and its moist on the inside with just the right amount of sweetness. I will be saving this one :) If anyone is wondering about the substitute... you pour a TBSP of white vinegar or lemon juice into a liquid measuring cup, then add milk to the 1 cup line, stir it, let it sit for 5 minutes and there ya go!

Easy Pumpkin Muffins

Reviewed: Oct. 22, 2011
I LOVE this recipe!!! I used a package of spice cake mix and a can of plain pumpkin puree. Just to "kick it up a notch" I mixed in some macadamia nuts and sprinkled splenda brown sugar on top of each one before baking. I took mine out at exactly 20 minutes and they were PERFECT. Super soft and moist.

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Sep. 5, 2011
This was AMAZING!!!! I followed the recipe as closely as I could, but instead of heavy cream I used light cream, instead of bow tie pasta I used tri color rotini, used italian parsley and did not have any red pepper flakes to put in. I do think the red pepper flakes would have made it even better but I really liked it how it was. We put grated parmesean cheese on top, and had it with garlic bread. Even my extremely picky 3 year old gobbled it right up, and she hardly ever eats all of the food on her plate. I think the amount of sauce with the pasta was perfect and the flavors blended together so well. We will be making this one again for sure :)

Amaretto

Reviewed: Dec. 18, 2010
I made this and it was so good I made another double batch and put it into little bottles for everyone at work for Christmas (along with some cookies and a dunkin donuts gift card) I didnt have quite enough almond extract for the second batch so I added more vanilla and it still turned out great. I used smirnoff vodka to make it.

Autumn Squash Casserole

Reviewed: Oct. 14, 2010
Wow this is amazing! I was a little skeptical but the other reviews convinced me to try it. I used butternut squash, gala apples and instead of butter I used the best life spread made with olive oil. The only thing I had to change was the topping because my family is not a big fan of any type of nut. I was also out of cornflake cereal so I had to improvise. I used 1 cup of rice crispies, 1/2 cup brown sugar (but could have probably used less) and 2 tbsp melted butter. I mixed it all together and sprinkled it on top, delicious! My EXTREMELY picky 2 year old even likes it, thank you for such a wonderful recipe! I will probably make a big batch for Thanksgiving too :)

Pumpkin Fluff Dip

Reviewed: Oct. 3, 2010
Simple and yummy! I made this with my 2 year old daughter and we had it with cinnamon graham crackers. I used fat free cool whip and vanilla pudding mix like the recipe says but I think other flavors would be really good as well, like maybe butterscotch. Very inexpensive to make, so that is always a plus. We loved it, thank you for sharing! I think this would also be a very good frosting for a spice cake, even good on cheesecake or to spead on pumkin bread.

Divine Hard-Boiled Eggs

Reviewed: Aug. 13, 2010
Cooked the eggs exactly as the recipe states, except when I took them out I put them in an ice bath and skipped the refridgerater step. They came out perfect. The prettiest hard boiled eggs I have ever made. The yolks were bright yellow all the way around and fully cooked :)

Garlic Parmesan Orzo

Reviewed: Jul. 22, 2010
I made this last night and everyone liked it. The amount of garlic, parmesan and salt was PERFECT. I did not have the fresh parsley so that was left out but I did not miss it. I did have to add in a touch more milk than called for but still a wonderful recipe. So quick, easy and inexpensive. This would go well with many things! I will make this again for sure and maybe even try different cheeses. Thanks!

Creamy White Wine Sauce

I made this exactly as stated and it was way too salty and I really like salt. I think with some changes it would be a good sauce but as is I do not like it.

Restaurant-Style Chicken Scampi

Reviewed: Jul. 11, 2010
I did as another reviewed suggested and made a white wine butter sauce instead of using the alfredo sauce. But I did everything else the same. This was a HUGE hit, my husband has already begged me to make it again! It was not quite as good as the chicken scampi at olive garden but I was still very satisfied :) Thank you!

Japanese Shrimp Sauce I

Reviewed: Jul. 11, 2010
I followed the recipe exactly the first time I made this. The vinegar taste was WAY too strong. I was pretty dissapointeed because it did not taste nearly as good as the sauce at our favorite Japanese restuarant. The next time we ate there we asked them what was in their sauce, and they would not tell us. However they did say yes when we asked if they used ketchup in the sauce. So that is atleast one thing missing. It was still a good sauce after sitting in the fridge for a while, maybe a good salad dressing... it just was not what I was hoping for.

Broccoli Beef I

Reviewed: Jul. 10, 2010
The first time that I made this recipe I followed the directions exactly. It was okay, but did not taste like beef and brocolli that I was used to. Since then I cooked the meat longer to make it more tender, I add more seasoning and instead of using flour I skip it and then add cornstarch at the end to thicken it up. I think it comes out better that way but that is just my opinion.

Chinese Egg Soup

Reviewed: Jul. 6, 2010
I was suprised at how good this was because its SO easy!. I did cut the broth in half though. I boiled 2 cups of water, tossed in a knorr's chicken bouillon cube then when that dissolved I slowly added the egg. I think 1 egg for 2 cups of broth was perfect for me. I skipped the peas and the green onion (because we are out) I dont think it needs the peas but would be even better with the green onion. After cooking I just added a dash of white pepper and that was it. My husband did not want to try it at first because he has tried the egg drop soup at chinese restuarants before and never liked it. When he tried this, he didn't want to stop eating it! My 2 year old also really liked it. Thank you for this recipe, I think I will be making it a lot.

Sun-Dried Tomato Basil Orzo

I made the recipe exactly as written except for the addition of feta cheese on top. I thought it was pretty good with a little more salt, unfortunantly my family did not like it.

Apple Cinnamon Oatmeal Bread

Reviewed: Jun. 11, 2010
Wow is all I can say!! This bread is so moist and delicious! Dont skip the oatmeal on top it really gives a good flavor and texture. I only had peach oatmeal so I used that instead of the apple cinnamon oatmeal. I did not have chunky applesauce so I used a cup of regular no sugar added applesauce and 1/4 cup dried cranberries. I also did as others suggested and used 1 1/2 packets of the oatmeal in the batter and 1/2 packet on top. I floured the loaf pan with flour and cinnamon mixed together. I also added 1/2 tsp vanilla extract and 1/2 tsp salt. This was incredibly easy and my 2 year old cannot get it in her mouth fast enough, hehe. Thank you for such a wonderful recipe!
