     On the menu for today was a delicious sounding Roasted Vegetable Medley.  I chose that since we had homemade perogis in the freezer and a jar of Marinara that Chef Chad had made.  I wanted to create something and I though it sounded pretty delicious.  The recipe called for roasted bell peppers & since I didn't have any I had to roast them first.  I kept thinking, "isn't there an easier way?  What if I just make it like this...." Then I remembered! I just need to start at the beginning of the directions and go step by step! How did it go? Delicious!
      Roasting the pepper was not that big of a deal, I adjusted the rack in my oven to be at the highest level, turned it on broil and cracked the oven a little.  I had a little problem at first when one of them touched the element and some fire started but I just got out my tongs and moved it over.  Every 5 min. I would turn the pepper and then when it was all black I wrapped it in saran and put it on the stove.  I should have put it in the sink instead because after it cooled down and I had to tear the skin off there was a big mess on the stove for me to clean.  I should also mention that I put them on a baking sheet when they were in the oven.  If I had not done that they would have dripped all over. 
       After roasting the peppers and cutting up the squash, potatoes, parsnips, carrots and asparagus I was all set for  5:00 to arrive.  That is when I needed to put it all together.  I really liked how I did all my prep work in the morning and then was ready to literally throw it all together when dinner time came around. 
         All in all todays dinner was a hit, and all I had to do was follow the directions!

This is really great. As the boys get older I envision the entire family in the kitchen putting meals together. Have fun.

NewMe, some of us here do "gatherings" and meet up with friends we have gotten to know here on the Buzz. I do one in Brighton annually that is coming up in 2 weeks! It has gone so well, there are 5 couples coming in Friday night to go to dinner! We have 7 couples meeting for lunch on Saturday at the Brighton Bar & Grill! About Me

My favorite things to cook
I love to cook dessert! I also really like to use what we have in the house, its a challenge for me to use what I have and to make just enough for dinner. I don't want to waste food!
My favorite family cooking traditions
Hubby loves to work in the kitchen so often he will bring home a bushel of tomatoes, potatoes, sun chokes,(you name it) and then process away. I like to figure out how I can use this food!
My cooking triumphs
Love it when I get complements from the kids, and when I get it all cleaned up and put away before husband comes home from work. It looks like the dinner just appeared.
My cooking tragedies
Well I really didn't follow recipes until last month so I have too many to write here! Now that I know I just have to follow the directions until I learn more I am much better at it!
