On the menu for today was a delicious sounding Roasted Vegetable Medley.  I chose that since we had homemade perogis in the freezer and a jar of Marinara that Chef Chad had made.  I wanted to create something and I though it sounded pretty delicious.  The recipe called for roasted bell… MORE

I've been married to my wonderful husband for 16 years! We have 4 Growing! boys ages 14-4. I never used to cook dinner (or anything) because hubby is a chef.... but I decided to start and this is TheNewMe!
My favorite things to cook
I love to cook dessert! I also really like to use what we have in the house, its a challenge for me to use what I have and to make just enough for dinner. I don't want to waste food!
My favorite family cooking traditions
Hubby loves to work in the kitchen so often he will bring home a bushel of tomatoes, potatoes, sun chokes,(you name it) and then process away. I like to figure out how I can use this food!
My cooking triumphs
Love it when I get complements from the kids, and when I get it all cleaned up and put away before husband comes home from work. It looks like the dinner just appeared.
My cooking tragedies
Well I really didn't follow recipes until last month so I have too many to write here! Now that I know I just have to follow the directions until I learn more I am much better at it!

Roasted Vegetable Medley
I wasn't sure how this would turn out. I thought it might be dry but tossing the veggies together with the moist roasted bell peppers & oil @ garlic really made it taste delicious. The sweet potatoes were of course everyone's favorites so next time I might throw another one on. The color was really nice and added a bright happiness to our table. When I made this I doubled the garlic and halved the basil. It would be great either way though I bet.

Sugar Snap Peas
YUM! Don't forget to clean the pea pods first and to take that fiber string out of the middle before you cook them. I got a bag of them from Costco and the were washed but not de-strung. Hubby told me a nice story about how one time they hadn't been De strung and everyone that had eaten them had a stomach ache. I asked him if he had told the person who had cooked them, that's when he kindly told me it had been me! He is so sweet to not have blamed me for it back then, but to warn me this time! Anyway, these were very good and I cant wait to make them again!
