Ricotta Cake

I was extremely disappointed after making this cake. I followed the recipe exactly and used a Betty Crocker yellow cake mix. Warm out of the oven I thought it was very bland and my husband agreed (and he LOVES yellow cake). Gave it the benefit of the doubt and tried it the next day, but only marginally better. Maybe less ricotta and more vanilla might have helped, but next time I'll just stick with plain yellow cake. Will not be making this again.

Slow Cooker Cranberry Chicken

Unfortunately, this meal was not appetizing at all! I was excited about it being so easy, but couldn't get over the horrible smell that came from this meal. While the chicken itself was ok, the "soup" it was in was not. Kept thinking I had done something wrong, but I hadn't. This meal went in the trash.

Quick and Almost-Professional Buttercream Icing

This is quickly becoming my go-to frosting recipe. The first several times I made it was just for cupcakes and I had enough to frost an entire batch, but I rarely get 24 cupcakes out of a box mix. I just recently used it for my husband's birthday cake and to be safe I doubled the recipe and also added 1 cup of sifted cocoa powder. It made a large amount - plenty to generously frost a 9x13 cake with about 1 cup left over, so I expect for a layer cake it would be just about right. Amazingly, it doesn't get too thick with the extra dry ingredients...even with a single batch adding in 2/3 cups cocoa powder (as suggested by another reviewer). Flavor is overall very good - not too sweet, but you must use REAL butter.

Jalapeno Popper Spread

This is excellent, although it really should be called a dip rather than a spread and more people might find the recipe this way. Made it last year for the Super Bowl and nobody really ate it, but I was pleasantly surprised and took what I couldn't eat into work the next day and they devoured it! Now I make it regularly for work birthdays and everyone loves it, even people who can't handle a lot of heat. I sprinkle the cheese on top and bake for 350 for ~20 minutes until the cheese is melted and browned a little...I have never tried microwaving it. Great with butter crackers, but tortilla chips are also good. Plus, if you love lots of "pop" you could add more jalapenos to your liking.

Chicken Fried Chicken

Overall, this was a very simple recipe to prepare and used ingredients I always have at home, which is a definite plus! The hubby was also very happy with this meal, which is an even bigger plus as he is pretty picky, even about fried foods. As suggested by other reviewers, I pounded out the chicken breasts and soaked them in buttermilk for 20 minutes before breading (therefore didn't use the egg). Also added in garlic powder to the breading. They came out uber-tender and juicy! However, I only used three larger chicken breasts and the amount of breading was just enough for the three - if I'd used six it would have not been near enough. This recipe is going in the books! Thanks!

Slow Cooker Pulled Pork

THE HUBBY LOVED IT!! I used a 2.5 lb pork butt, which only cost $6, and two cans of the cheapest root beer the supermarket had. Couldn't have been easier! Definitely recommend you drain well BEFORE shredding, otherwise you might have a little more residual root beer flavor but otherwise the root beer taste is indistinct. This recipe is going on my shortlist!

Balsamic Bruschetta

This is an excellent bruschetta recipe! But I added a LOT more balsamic than called for to give it more flavor, like a lot of other reviewers do.
