Carrot Cake III

Delicious carrot cake! I use a different cream cheese frosting recipe, only because I've used it for years and I usually stick with what works for me. But I can tell you that the cake part of the recipe is INCREDIBLE. People are offering to buy these cakes from me! :D

Roasted Lemon Herb Chicken

These seasonings are a great combination for roast chicken. I made it a little easier by combining the olive oil, lemon juice, and seasonings and rubbing onto the skin and also the inside of the bird. I also put the lemon, after juicing, into the cavity while roasting. Remember to let the chicken sit for 15 minutes or so before carving to ensure that it's nice and juicy.

Summerly Squash

I would like to give this recipe 4 1/2 starts rather than 4. Very good. This is easy to prepare and healthy. Canned diced tomatoes can be substituted for fresh if you don't have fresh. Also VERY tasty over pasta with grated parmesan or romano cheese. Monitor the squash closely, it can overcook and become mushy very easily. Thanks for the recipe, I will be making this part of my repertoire. :D

Blueberry Cream Cheese Pound Cake I

This is quite good! It doesn't have the dense texture that most pound cakes do, but is lighter and very tasty. It's great as a dessert, but also good with coffee for breakfast. My hubby just can't stop eating it :D Also, I didn't notice an "artificial" taste from the cake mix that other reviewers have mentioned.

Coconut Shrimp I

Very good! I made this for our Mother's Day celebration, and everyone loved it. For a dipping sauce I combined 4 ounces of pina colada mix (non-alcoholic), 3 ounces of crushed pineapple (drained), and 3 ounces of sour cream. This made a restaurant quality dish. My mom is already asking me to make it again!

Holiday Chicken Salad

Delicious! I love serving this chicken salad on croissants. This is so nice for a ladies' luncheon or a shower with a fruit salad. Every time I make it, everyone loves it. It is a bit time-consuming to make, but you will be happy that you did!

Delicious Ham and Potato Soup

This is very delicious. You can use chicken broth instead of the bouillon and water if you wish. I generally use more ham than the recipe calls for. The only negative thing I can say about this soup is that I didn't really care for it the next day. It was definitely better the first day.

Slow Cooker Chicken Taco Soup

Family loved it. You can make some changes to the recipe if you don't have some of the ingredients on hand; which is what I had to do. I used light kidney beans instead of chili beans and substituted chicken broth for the beer. Also, I used reduced sodium taco seasoning. Try it served over rice, it's very tasty.

Lemon Bundt Cake

This is a very good cake. I took it to a dinner party and was asked for the recipe. When I explained how easy it was, they couldn't believe that it was made with a mix. I drizzled it with a powdered sugar/fresh lemon juice/water glaze which gave it a pretty finish and a fresh flavor. Also, cooked longer than the 35 minutes.

Peanut Butter Cup Cookies

These are the most delicious cookies ever. I have made these many times and they are really easy and quick. I prefer to slightly undercook them, so they are chewy. Everybody loves these and they are highly addictive.... so make with caution!

Buckeye Balls II

Delicious. My husband is from Ohio and these are a tradition in his family. As others have stated, the peanut butter/sugar mixture is rather crumbly and hard to roll into balls, but I rectified this by adding a bit more peanut butter. Next time I use this recipe I will try just adding less powdered sugar. Also as others have stated, this recipe is a little labor intensive, but they are so good it's worth it!

Flatlander Chili

Extremely good chili recipe. I have made this countless times and EVERYONE loves it. The only thing I do differently is add a can of diced tomatoes or a can of Rotels, whatever I have on hand. I like the additional tomato pieces, it adds more texture to the chili. Thank you George for the recipe!

Crustless Cranberry Pie

Very good. I made it in a square casserole, rather than a pie plate. This definitely doesn't have the texture of a pie, but is more like a bread. It has a nice balance of tartness/slight sweetness. Also, very easy to make. I will make again for Thanksgiving.

Cajun Chicken Pasta

This is delicious, and I make this for my family fairly often. It's my son's favorite meal, and chooses this as his birthday meal. I use "baby bella" mushrooms and quite a bit more cajun seasoning (Tony Cachare's) than called for. I also use half & half sometimes, depending upon what I have on hand. It is rather easy to make, even though it may look like a lot of ingredients.

Grandma Ople's Apple Pie

Beware: If you bake this pie and others taste it, you will be asked to make it again and again! So, unless you want rock star status, don't make it!! It is the most delicious apple pie I have ever made. Pouring the sugar/butter across the top is very sticky and messy, but it really makes the top so delicious. I do make some very minor changes. I add cinnamon and a touch of nutmeg and cloves to the apples, as well as some of the syrup mixture. I stir them well, then add to the pie crust.
