Roasted Lemon Herb Chicken
These seasonings are a great combination for roast chicken. I made it a little easier by combining the olive oil, lemon juice, and seasonings and rubbing onto the skin and also the inside of the bird. I also put the lemon, after juicing, into the cavity while roasting. Remember to let the chicken sit for 15 minutes or so before carving to ensure that it's nice and juicy.
