Oatmeal Chocolate Chip Pancakes

Was looking for an Egg Free Pancake recipe since I'm out and was so glad I found these. I used 1/2 the salt, Chocolate Chips, 1/2 Milk & 1/2 water since I ran out, and added about a tablespoon of brown sugar to the batter. (Yes, I really need to get to the store) They were sweet enough to avoid any need for syrup and the kids loved them and I didn't feel bad about serving them.

Baked Chicken Nuggets

Love the recipe as is, but I also use it as a base to work from. I tend to use yogurt and milk rather than egg or butter to coat the chicken, and I when I have old bags of chips, I mix crushed chips and panko to get a unique crust. I've had tortilla chip crusted chicken and even sun chip crusted chicken. And I use chicken tenders and don't always cut them into nuggets. It's faster and cooks just as well.

Easy Pasta Chicken

Decent. A good base to build from. Cooked my chicken in garlic and Mrs. Dash, but still lacked flavor. I added a little salt, but that's a concern when using a canned soup since it's already loaded with sodium. I like the idea and will use it again with some definite tweaks.

Oatmeal and Wheat Flour Blueberry Pancakes

LOVE THESE PANCAKES! So good, I got my mom to replace her recipe for pancakes and she's the one who taught me everything I know about cooking. I never have Soy Milk on hand (can't stand it), so I use 2% milk. My first step is to put Whole Oats in a bowl with the milk and set aside while I prepare everything else. I double the brown sugar and no one bothers to put syrup on them they're so sweet. I make them at least once a month and we let the leftovers sit out a bit on a paper towel to dry and then freeze them for a toaster oven quick breakfast in the next week.

Four Egg Yellow Cake

Decent. It may be that I just don't know what to expect from yellow cake. My wife liked it, but maybe she was just being polite. I found that it tasted much better after sitting for 24 hours, but I really doubt I'll make it again. Then again, the milk chocolate frosting I put on top was most excellent. (3oz semi-sweet chocolate chips, 3.5oz milk chocolate bar, powdered sugar, butter, and milk)
