Summer Zucchini Casserole
Like most, I made adjustments to this. I left out the carrots because I just hate cooked carrots. Instead I added yellow summer squash and I used considerably less of it + zucchini. I sauteed the veggies in a bit of olive oil with salt and pepper. I added in cubed chicken too. This is a super hearty, creamy, filling dish. Absolutely delicious and rich in flavor. My only complaint is it tasted a little TOO onion-y what with the stuffing and all. Tasted similar to eating a box of stuffing by itself. Next time I make this I'll be sure to reduce or even leave out the onion altogether. The stuffing provides ample flavor. Another bonus - this reheats well! Dinner for a week? Whoo hoo!

Baked Honey Mustard Chicken
One of my friends LOVES honey mustard, so for our weekly Girls Night, I decided to try this recipe. I cut the ingredients in half since I was only making 3 pieces of chicken. Other than that, the recipe was followed exactly. I noticed many other reviewers used dijon mustard - but I decided to try it with standard yellow. I cooked covered with foil for the first portion of cooking time and uncovered the rest - turning once or twice during the process. This dish came out super succulent and tasty! The flavor was not over-powering of the chicken, which I liked. A perfect healthier option for dinner.

Blueberry Streusel Muffins
This was my first time making blueberry muffins from scratch - and boy, was I impressed with how easy this recipe was to follow! The steusel came out way too moist - it was more of a coating than a crumble - but it still tasted great. I agree with other reviewers that the muffins are more cake-like than anything else. But they are the perfect amount of sweet - and due to the density of the mix I could probably use this base to make a cake in the future! All in all? Super yummy.
