Indonesian Satay

20 stars! *5 for being DELICIOUS *5 for being INTERESTING *5 for being EASY *5 for being HEALTHY I made it according to the recipe other than adding about 1 tsp cayenne to the satay sauce, just for a little warmth. We had it with steamed broccoli and coconut basmati rice (just replace about half the water with light coconut milk). We agreed, this recipe is in the dinner rotation!

Grilled Bison Burgers

First time cooking with bison so thankful for this great recipe. I've heard bison can get dry because it's so lean, but the egg, Worcestershire, and breadcrumbs seemed to bind it together nicely and keep it from drying out. Made just as described except added some salt to the formed patties. The burgers were super flavorful. Turns out I like bison so look forward to making this again.

Salsa Chicken Burrito Filling

This was really good. I followed the recipe except prepared it in the crockpot. 6 hours on low. Came out tender and flavorful. Will make again!

Burrito Pie

Five stars! I halved the recipe since it's just me and my husband. I still thought we would have plenty of leftovers, but he ate half the pan! I used ground turkey instead of ground beef and added to it half a packet of taco seasoning; not as many tortillas; and not as much cheese. I baked it in a 8x8 inch glass dish. It was super flavorful and filling. This one's going in the rotation!

Quinoa Side Dish

Pretty good... I made this recipe exactly according to instructions although I used 1 tsp of dried thyme rather than 1/2 Tbsp of fresh thyme. The flavor was a little bland for our tastes, but was helped by a few extra squeezes of fresh lemon juice, a little more salt, and a sprinkle of fresh Parmesan. One great aspect of this recipe is toasting the quinoa, which added some personality to the dish.
