Baked Flounder with Panko and Parmesan

Made this last night - really good and quick to make. I backed off on the butter a bit but it still came out really tasty. I also used parsley instead of thyme (just a preference), and added some garlic powder to the bread crumb mixture. This would work well with any mild fish fillet.

Mocha Cake V

This was good. Came out super moist and rich. But it's not a mocha cake. There was a *slight* taste off the coffee liqueur but it really reads like a vanilla cake. I would like to make this with a chocolate/devil's food mix instead of yellow, and add some instant coffee to the mix. I added a bit of instant coffee to the glaze also a bit of salt, that was good.

Cornmeal Cookies II

These are awesome. I love simple non-chocolate cookies. I was actually looking for a cookie I could make with the ingredients I had in the house, and this came up. They are sweet/savory, have a great texture, and are totally addictive. I used half butter/half margarine instead of "shortening" and omitted the butter extract because I didn't have any. Really, really good if you like a plainer cookie.

Toll House® Blonde Brownies

Awesome. This is not a sophisticated dessert. But it is delicious. I made as written except I didn't have a jelly roll pan so baked in an 11x9 baking dish for about 37 minutes. These were literally inhaled in minutes.

Italian Bread Wedges

This review is for the dough only - I just cut it into 12 pieces and tied in knots and baked it with olive oil, garlic, and grated parm on top - they came out really good. Sort of like garlic knots from the pizzeria but a little less chewy. Definitely better freshly baked than the next day though. Very easy, will make again.

Oven Beef Stew

This was really good. I added a 2 crushed cloves of garlic and a couple of bay leaves. I also used extra liquid, both water and beef broth as I was using extra meat, potatoes, and veggies. The ONLY criticism I have is that while the tomato soup added nice flavor, it was a bit sweet, even with the extra liquid I added. I will definitely make this again but next time I will add something to cut the sweetness a bit, maybe some red wine or red wine vinegar.

Sarah's Rice Pilaf

I was looking for a rice pilaf recipe to go with fish and found this. It was excellent. I made it exactly as written except I used just one can of chicken broth which is a little less than 2 cups. I usually scale back the water called for in rice recipes as I don't like wet rice. Also I added a pinch of salt and some dried parsley at the end for a bit of color. It was really delicious and had a depth of flavor I was not expecting. It is extremely important to really brown the pasta though, I think a lot of people skip that part when making pilaf.

Chicken Thigh Fricassee with Mushrooms and Rosemary

Delicious - but as usual, I made multiple changes. First, I took the skin off of the thighs, I love chicken thighs, it's the tastiest part of the chicken (people who are all "ewww" and only eat white meat, you don't know what you are missing), but if you are cooking them with sauce in my opinion it just makes a grease slick in the sauce which is yuck. Second, I coarsley choppped the garlic instead of halving it. Third, I minced half an onion and threw it in with the mushrooms. Fourth, I added an entire cup of liquid but did 1/2 wine, 1/2 chicken broth. Fifth, I added a bay leaf. Sixth, I let it simmer uncovered at the end for 15 min to let the sauce reduce. I know that's a lot of changes, but I feel that it's a great base recipe. It was really, really delicious. I served over rice and honestly I was impressed. I would be very pleased if I was served this in a restaurant.

Hearty Split Pea Soup

Great but made modifications. I made with chicken broth and added extra spices like a pinch of cayenne pepper. I did not add milk. A lot of comments about it being too thick but in my opinion that is how split pea soup is supposed to be :)

Chicken Pasta II

This is a good base recipe but in my opinion needs a few changes otherwise it's kind of boring. I give this 4 stars based on the additions I made: added 3 cloves minced garlic, 1 small onion chopped, a handful of fresh mushrooms, crushed red pepper, fresh basil, dried oregano (instead of generic "italian seasoning"). I've made this with both fresh tomatoes and a can of diced tomatoes and it comes out good. I would use canned unless you have GOOD fresh tomatoes, which are often hard to come by. Also I would not cook the chicken all the way and then simmer for 20 minutes, the chicken would be rubbery by that point. I cook the chicken halfway then it cooks the rest of the way by simmering.

Spicy Basil Chicken

This was awesome. I made as written with the exception of using 2 dried chili peppers which I removed after cooking and using only 1/2 bunch of basil. It was really great. I was OK with the amount of heat, but might replace 1/2 tbsp of the chili oil with regular oil next time just to dial it back a notch. Definitley don't overcook the chicken, as soon as it's white on all sides add the onion and sauce, everything will cook through by the time the onions are done. I used 5 tbsp of oyster sauce and I didn't think it was oversalty at all but there are probably variations with different brands.

Cinnamon Swirl Bundt Coffee Cake

This turned out really good. I used nonfat plain greek yogurt instead of sour cream. I was concerned at first because the batter was VERY thick, I couldn't pour it at all. But I spooned it in and spread it in the pan and it came out fine. Next time I will use a bit more walnuts, I don't think 1/2 c. is enough. Also a bit more cinnamon/sugar in the middle. I think doubling it might be overkill but maybe just a bit more. I used a powdered sugar glaze over this.

Good Old Fashioned Pancakes

These were awesome. I'm sure using the melted butter instead of regular oil contributed to that. The texture was great, melt in your mouth good. And really, really easy, I will never make pancakes from a box again.

Sausage Pasta

One of my favorite past a recipes. Was just looking at this as I think I will make tonight. I try to cook "healthier" 85% of the time so I usually make with chicken italian sausage (and throw a little white wine in as well.) I also make with ronzoni smart taste pasta (the only higher fiber pasta I can stand). With the chicken sausage and healthier pasta this isn't really a bad dish from a health standpoint, as long as you keep your portion in check. It's really easy and everyone likes it (sausage? pasta? cheese? what's not to like??). Definitely a winner.

Blueberry Sour Cream Coffee Cake

Wow. I made this exactly as written. I have never in my life gotten such a positive reaction to a cake I made. I made it for a family get together. It was kind of ridiculous everyone oohing an ahhing over this. Lots of people went back for a second piece and they finished off the cake. I had a small sliver and it really is delicious and very very moist.
