Country House Bed and Breakfast Casserole

What ever you do, don't omit the butter and use something terrible like Smart Balance, which is just colored water! I used potatoes instead of croutons and omitted the mustard since I didn't have it on hand. This turned out wonderful!

Bacon Wrapped Pork Medallions

I made these tonight, and they were awesome! I followed the recipe except for adding cracked pepper to the seasoning mix. I served it with dirty rice and corn. Yum, yum! Make this, and you won't be sorry!

Chicken and Bacon Shish Kabobs

I like to try out a recipe in advance of serving it to company. I am not a big fan of chicken, and I refuse to eat mushrooms, but my husband likes both. Boy, did these Kabobs turn out wonderful! I even ate them, except for the mushrooms. The chicken was so moist. The bacon really makes a difference. The only thing I did differently was to use fresh pineapple instead of canned. I also added bell pepper to the skewers. It looks like the picture shows onions and peppers, but the recipe didn't call for them. I did them under the broiler until the bacon was brown, then based them, turned the oven off, and let them bake for an additional 10 minutes. Served it with dirty rice. Yum!!

Vanishing Oatmeal Cookies

What a perfect oatmeal cookie! It taste just like I remember my mother making. It turned out perfect. It wasn't flat or too puffy. The onlly thing I did was omit the nuts because I didn't have any, and used cinnamon instead of pumpkin spice. Great recipe!

Strawberry Pretzel Salad

First of all, I made a mistake. I didn't realize you were not supposed to put in the 2 cups of cold water that you put in when making Jello until I read someone say maybe you were supposed to do that. I don't know that would have made any difference to my rating. It was way too salty for me, and I didn't care for that. I won't make this again.

Bronco Burger

I halfed the recipe, but followed it exactly except I used Jalapenos from a jar. It was mildly spicy, but I hate having my mouth burned, even a little. So I didn't eat but half of one. My husband, who likes spicy food, said they were OK, but nothing special. I thought they would have more flavor, but I don't think there was enough sauce, etc in the recipe.

Fluffy Pancakes

I am doing what I hate, and that is to review a receipe when I didn't follow it exactly. I usually think altering the recipe makes you ineligible to review it, but creates a new recipe instead. I added a teaspoon of vanilla and some blueberries. It turned out great. It was still fluffy. Next time I won't add as many blueberries since it took a long time to cook.

Salisbury Steak

This recipe is wonderful exactly as written. It is just like the way I do meatloaf, so that is why I like it. Making more gravy is easy. Just change the number of servings to a higher amount and follow the recipe for the gravy as written.

Cheesy Ham and Hash Brown Casserole

This is an awesome dish! It is not too rich. Anything less and the dish would not be worth eating, unless your one of those odd people who like to eat just leaves for dinner. It gets better as leftovers. I recommend this dish! I did use Cream of Celery and Cream of Chicken as the soup because that is all I had. Wonderful, wonderful, wonderful!!

Chicken Fettuccini Alfredo

This recipe would have been a lot better and a lot easier if it would have used canned soup and real cream. The soup would have made it richer as would have the cream. The sour cream could be omitted as well as tomatos. Who ever heard of tomatos in Alfredo? Go ahead and used canned soup and you will have a great dinner!

Buttermilk Pancakes II

I made these for breakfast this morning scaling the recipe to 4. The first pancake I made, I did not let cook long enough, and it was raw in the middle. I tried another one, and remembered I had blueberries in the freezer. I sprinkled a few on top, and was sure to cook the pancake long enough. It was great. I followed the recipe exactly. I can't say it was as easy as making pancakes from a mix, but it sure did taste good. They fluffed up nicely as well.

Delicious Ham and Potato Soup

Who wants all of those lumps of potatoes in their soup? Yuck! I like my potatoes pureed, like the first picture shows. Cook the potatoes first in bullion and water, or in chicken stock. Puree them well. Cook the celery and onion in butter until they are soft, then add to the non-lumpy potatoes, and finish as directed. I am sorry I couldn't rate a lumpy soup higher than a 2.

Absolutely Ultimate Potato Soup

Before I met my husband, I used a different recipe. He introduced me to this one, and once I tasted it, I was sold. Now it is our go-to recipe for potato soup. What makes this so good is the bacon. We reserve some of the bacon to top the bowl, and also top it with cheese and green onions if I have it. They have the title of this soup correct - absolutely the best potato soup ever!

Creamy Hot Cocoa

Wonderful hot chocolate. Whatever you do, do not reduce the amount of sugar or you will ruin it. It makes 4 servings, afterall, and you can never call this too sweet. Sure warms up the tummy on a cold night.

Waldorf Astoria Cake Frosting

Turned out great for my cupcakes. I used real vanilla since I didn't have the imitation stuff, but it still turned out pretty white. Just be sure to add the milk a little at a time. Confectioner's sugar doesn't take much liquid.

Melt In Your Mouth Peanut Butter Cookies

Tuned out very good. I omitted the water and added vanilla. I didn't think it tasted very peanut buttery. It didn't "melt in my mouth". I had to chew. In any case, it is a good cookie.

Creme Brulee

This creme brulee turned out great. I followed other's advice about using a water bath, and I found I didn't need the second cooking. I had to cook it longer, but that could be because I used a larger dish. It made only two, not five. It was pretty eggy though, so next time I am going to use a recipe with less eggs, and use a 4 inch dish.

Blueberry Orange Bran Muffin

These muffins came out wonderful. The only change I had to make was to sub wheat bran for the oat bran. For the life of me, I couldn't find any oat bran, except Kellogg's Cracklin Oat Bran, but that had cinnamon and nutmeg in it, plus it would have had to be crushed. For her Christmas present, I gave my daughter a "snack of the month". This month's theme was Bran, and these went into that package. I had to bake them 18 minutes. I used a large navel orange. You can really taste the orange in them. I used frozen blueberries, and did not thaw them before adding them to the flour. These muffins really are good. I recommend them.

All-Bran Cranberry Crumble Coffee Cake

I haven't tasted it yet, but it looks awesome - in the center. I didn't have a 9 inch pan, so I used an 8 inch pan. That meant that 40 minutes at 400 degrees wasn't enough to cook the center. I had to bake it about 60 minutes for the center to get done. You don't have to guess that the edge and the bottom burned. I know I can cut away the sides, but not so easy the bottom. I think this is an awesome recipe, but use a 9 inch pan!! Also, fresh cranberries are not in season, so I used dried and soaked them for 15 minutes in water that I then drained off. No other changes were made.

Classic Goulash

Great recipe! I made it as is, and it really is a comfort food. It needs no tweaking! I have no idea where some reviewers got that it was Hungarian Goulash, but they didn't get it from this recipe. Never add something like cloves or nutmeg. Make it as is, and enjoy it as it warms up your tummy.
