Cottage Meatloaf

This was the first meatloaf I ever made that didn't turn out to be a disaster, because it uses a 9x5 loaf pan, which is all I have right now. Not only was it not a disaster, but it was delicious. I only made about half of the sweet topping because my fiance and I have no sweet tooth at all, and it was perfect!

Delicious and simple. I loved the way the sieved tomatoes infused the olive oil with their flavor. I left out the anchovies to make it vegetarian and it did not suffer at all!

T's Sweet Potato Fries

When I made these my fiance said "We should have these every day." Since then, they've made weekly appearances in my house and I've made them for my parents. They're absolutely perfect. I didn't have Italian seasoning so I made up my own with 1/2 tsp oregano, 1/4 tsp basil and 1/4 tsp rosemary (for 2 potatoes). A definite stand by recipe. Thanks!

Fat Free Refried Beans

I LOVE this recipe. I've made it several times now to go in burritos and I adore it. Made exactly as instructed, but with a few pulses in the blender at the end. The chunks don't work well for burritos in my opinion, but the flavor is unbeatable! Thanks!

Mom's Baking Powder Biscuits

I made these exactly as directed and cut the recipe in to 16 bicuits. They would up more like cookies but tasted perfect. To get them to the "biscuit" size that I knew my guests would be expecting I actually double the recipe and made a dozen biscuits out of it. They were perfect. Moist, flakey, delicious and easy, and reheated extremely well the next day. Thank you!

Lemon-Pepper Salmon II

Loved this recipe! I used a liberal amount of lemon pepper and it was perfect. The glaze soaks in so nicely under the broiler and the fish turns out flakey, tender and wonderful!

Mushroom Lentil Barley Stew

Absolutely delicious. I made this exactly as directed the first time and it turned out great. Now I'm having fun playing with it, like adding a cup of diced carrots or different kinds of mushrooms. It's a fantastic weeknight meal. Put everything in the crock pot the night before and keep it in the fridge until you switch it on the next morning. What could be better? Thanks so much!

Turkey Lasagna Roll-Ups

These were fantastic! Unfortunately, there are only two people in my household and neither of us could get through more than one roll. When I first read it and saw 4 lasagna noodles I was thinking, "Oh they won't be that big, no point in trying to halve this recipe." Well, they were, and there was! I'm definitely going to make this the next time we have friends over. The base recipe could feed 4 easily and they are DELICIOUS. The broccoli adds an awesome new texture to the lasagna, and it was really nice not to have an entire 9x13 pan of leftovers!

Can I give this 10 stars? We've had this every week for the past 3 weeks and it always tastes fantastic. I make it exactly as directed and let it marinate while I work. Then it's 15 minutes to dinner. Love it! Thanks!

Shrimp Marinara

This was awesome! I used 91-110 per pound count shrimp, so the little guys. Thawed them out a little before popping them in the crock pot with the sauce then put the whole thing over whole wheat linguine. It was soooooo good. Even my fiance, who is wary of all seafood that isn't breaded and fried, loved it. Thanks!

Perfect Double Chocolate Peanut Candy Cookies

Rather than peanut pieces, I used York peppermint pieces to make a mint chocolate cookie. The chocolate cookie base is absolutely amazing. Moist and wonderfully chocolatey. You could use any candy in them and it would be fantastic I'm sure!

Turkey Tenderloins

Love this recipe! I couldn't find 1 lb packaged of turkey tenderloins so had to buy 2 lb. I was so happy I did. I froze the second and made this again 4 days later! It goes great with mashed potatoes and green beans. I did find that it took closer to half an hour for mine to cook through, but it may have been the cut.

Fantastic Black Bean Chili

This really is fantastic! I was on a cleanse and trying to make sure I was getting enough fiber and protein in my day without a lot of processed ingredients. This recipe definitely did the trick. The cleanse is long over, but this recipe is a staple in my house now. Thanks for a great, simple, healthy and comforting meal!

This is one of the only recipes I've ever made that my boyfriend will ask for over and over again. The first time I made it I screwed up and didn't put in enough soup, but it still turned out great.
