Benny's Famous Jalapeno Poppers

These were really good. The only thing that was kind of annoying was that the cheese melted out of the jalapenos and made a huge mess on the grill. So maybe next time I would arrange them differently so the cheese was more "sealed in".

Fennel Cucumber Salsa

I had fennel I got from the CSA program from a local farm. Having never used fennel before, I didn't know what to do with it until I came across this recipe. FANTASTIC! It's light, fresh, crisp and perfect for hot summer days! Everyone loved it and now they are even requesting I bring it to BBQ's! I used lime juice instead of lemon though, as I read in other reviews. We ate it with pita chips. I will definietly make this a summertime staple. :o)

Strawberry Cheesecake

This was my very first attempt at making a cheesecake and it came out PERFECT!! I was so excited! I baked it in the water bath, which I think prevented cracks and from falling. I used the strawberry sauce like the recipe said to do, but to me it was a little strange after if baked. The sauce sunk, or disappeard or something and left holes in the cheesecake. It was still delicious, but I don't think I would use the sauce again. I made another one just plain with chocolate cracker crust and it was perfect, again!

Mom's Zucchini Bread

WOW! This was SOOOOOOOOO YUMMY! I followed what other users said and decreased the amount of cinnamon and I used almost 4 cups of zucchini, which was perfect! I made one loaf with chocolate chips (which is my favorite) and the other loaf with just walnuts. I think next time I will use less vegetable oil. It was a little too oily. I think I'll try the half applesauce and half oil.

Pizza Without the Red Sauce

This was delicious! I really liked the sauce, I have made it three times already! I sauted the onions a little before putting them on the pizza, I don't really like raw onions. And I also sliced the tomato before doing anything and layed them out on a paper towel to draw out some of the juices so it doesn't make the pizza watery. Then let them sit there while you prepare the rest of the pizza. The jalapeno pepper added just the right amount of spice! You can use any veggies, it's a great way to clean out the veggies in the fridge you would otherwise never use!

These were amazing!! I was skeptical about everyone saying they tasted like donut holes, but they really do. . .actually better than donut holes!! One batch is not enough, make sure you double it, at least. :o)
