Asparagus, Chicken and Penne Pasta

I made this pasta for dinner tonight, and I thought it was fantastic, with a few adjustments. I too added about 1/4c white wine to the chicken just before it was fully cooked. I like spicy dishes so I also added a jalapeno pepper to simmer in with the wine and chicken to add some extra kick. I added about half a chopped onion to the asparagus when I cooked it too. It turned out great!

Gourmet Mushroom Risotto

I made this risotto EXACTLY by the recipe and it turned out absolutely fantastic!! My family really loved it and I would definitely make it again. Standing and stirring for an hour over the hot stove was worth it!

Quick and Easy Alfredo Sauce

I made this for dinner, and it tasted fantastic! I substituted half of the butter for margarine, and used light cream cheese instead of regular. Topped off with some fresh basil from the garden and mixed with mushrooms and cut up chicken - it was great!

The Best Rolled Sugar Cookies

I made this recipe a few weeks ago and made all the changes that some reviewers suggested. I added just a bit less than a cup of extra sugar into the mix, and added 1/2 tsp more of vanilla. I found that the batter was a bit dry so I added a little more butter. I was a little scared when I first put the batter into the fridge because it was very sticky, but when I took it out the next morning it was great! They rolled out beautifully and turned out very tasty and were fun to make. My suggestion: WATCH the cookies and don't overcook them! Cheers

Easy Chicken Taquitos

These were a bit of a pain in the butt to make, but they actually turned out pretty good. I felt like the chicken mix lacked a bit of flavour though, so I added some store-bought taquito sauce. THEN they were tasty!

Easy Polenta with Tomato Sauce

I made this and it was fantastic!! It was my first time making polenta and I didn't know if I would like it very much. I followed the recipe exactly and used my own homemade sauce to top it off. Tasty!

Chicken in Mushroom Sauce

I make this all the time when I"m in a pinch for dinner. If you use low-fat CoM soup, it's actually not that fattening. I season the chicken with some cajun spice and Old Bay to give it some extra kick.

Oven Baked BBQ Ribs

I've made this recipe twice now. The first time I used pork side-ribs. I made it exactly as directed and they turned out great! I baked for about 1.5hrs covered with foil. For the other 1.5hrs I turned and basted them every 20-30 minutes. A bit of a pain, but definitely worth it! The second time I made them, I was in a rush, didn't make the full sauce quantity and was a bit careless with the timing and basted every half-hourish. They turned out a little dry, but still fantastic! Great recipe, thank you!

Caesar Salad Supreme

I decided to make this for a big dinner I was having. I strongly debated adding the anchovies, as I am not a huge fan of them. After tasting the dressing without it, I decided to venture to the grocery store and just try it. Boy, am I ever glad that I did!! The anchovies added such a depth to the dressing, it just was mind-blowing! I did have to thin it a bit with some olive oil and milk, but it still tasted fantastic. It was a hit! Thanks so much!

Tzatziki Sauce I

Super easy to make - got better with allowing time to blend the flavours together. I used plain greek yogurt and added deseeded cucumber that I let sit in a colander with some salt for a bit. I did add a hint of sugar because I thought it was a bit sour. I also added lots of garlic powder because I really wanted the kick of garlic in the sauce. Was delish!

Feta and Olive Meatballs

This is the second time that I've made these meatballs, and both times they have been a hit! I made it with ground lamb and used kalmata olives. I served with Tzaziki Sauce I and they were delicious! Will definitely make again.
