Amazing Crusted Chicken

Reviewed: Jul. 15, 2014
Amazing - no, good - yes. I cut my chicken into hunks (think large nuggets) and made the coating as written. Of course I changed my cooking time for the smaller pieces (15 mins) and they turned out PERFECTLY. The chicken was very moist and the coating added a subtle flavor and a little crunch. What would make it 5 stars is a bit more seasoning which you can add to your liking. Also, had extra coating so this could make a bit more chicken than it calls for. Dipping sauces are a plus. Would definitely make again.

Maria's Pepper Steak

Reviewed: Jan. 26, 2014
I was surprised at how good this simple sauce was. I will say that I made the sauce as written - after adding the onions and peppers it was a bit sweet for me, but still tasted good. I did add a little flour to thicken it up and next time I would add some ginger and maybe some red pepper flakes to really take it to the next level.

Avocado Feta Salsa

Awesome. Had a guest eat 3/4 of it in one sitting it was so good. Didn't change a thing.

Delicious Ham and Potato Soup

Reviewed: Feb. 2, 2013
Phenomenal. But that I used bacon instead of ham (and added it after I boiled the potatoes and before I added the milk mixture), I followed the recipe to a tee and it was amazing. Tastes like, but better than Panera's potato soup, which I like. I will make this time and time again.

Guacamole

Reviewed: Dec. 4, 2012
Simply awesome just as written. And a hint about keeping the guacamole green is to save the pit and put it in the dip when storing.

Swiss Chicken Casserole II

Reviewed: May 2, 2012
I think this recipe is good, and it's very simple. The only caution that I heed is that 6 b/s chicken breasts is way too many. I used 4, and I think next time I would just use 3, but it depends how much of the stuffing you want. (Assuming the author is calling one breast one of the HALVES out of the commonly sold 3 pack of halved breasts, which is what I used).

Beef Stroganoff III

Reviewed: Dec. 19, 2011
I don't really know what beef stroganoff is supposed to taste like, but I thought this was decent. Not a very complex dish insofar as taste, yet good. Did a few things slightly differently, but good base.

Banana Banana Bread

Reviewed: Apr. 9, 2011
My bananas only yielded about 2 cups which I believe was a blessing, I would not add the full amount next time either. I would agree that spices would enhance the flavor. Overall it was good and moist (and yes dense - it's banana bread!)

Veggie Pizza

Reviewed: Jan. 2, 2011
Good recipe. I used my own variety of veggies (red pepper, tomato, green onions, broccoli, carrots) and also used garlic powder instead of garlic salt ... and judging by other reviews I'm glad I did, I did not find the spread too salty when combined w/ the crust & veggies. Love the ranch & dill together. Also topped with a little shredded cheddar.

Muffin Frittatas

Reviewed: Dec. 18, 2010
The egg/milk ratio + bake time was perfect. I used different "extras" (canadian bacon and cheddar cheese), but they turned out wonderfully and reheated well. These were a party hit.

Cranberry Dip

Reviewed: Dec. 18, 2010
Great recipe, very easy to make. I skipped the pecans and doubled the cream cheese (which i think was necessary or there would've been lots of the cranberry mixture leftover. Was a HUGE hit.

Peanut Butter Banana Bread

Reviewed: Jun. 28, 2010
Way too floury. Can't even taste the peanut butter. Can't even imagine the texture if I'd not added some applesauce to keep it moist since others said this recipe turned out dry.

Marzetti® Red, White and Blue Slaw

Reviewed: May 29, 2010
Thought the blue cheese, tomatoes and bacon were an EXCELLENT topper to cole slaw that I would've never considered. Things I did differently were 1) use Marie's brand cole slaw dressing and added a little simple syrup to take a little bitterness off of the cabbage and 2) also finely chopped broccoli and added it to the slaw. Next time I will also add carrots to the mix. Adding the additional veggies is an easy way to get the benefits of raw veggies and does not compromise the flavor.

Florida Strawberry Muffins

These were okay at best, but not worth making again. I'd also say they are best for same-day eating.
