This rendition of broccoli casserole is what I have been searching for. I tried others, but the addition of the egg gave it the consistency I wanted - not runny! Instead of dotting with butter over the topping, I sprayed a little olive oil. The hubby gave it good reviews, and he doesn't like cooked broccoli! Vegetarianism can be difficult, but with recipes like this we stay very happy :)!

My Favorite Mexican Rice

Amazing! Cooked exactly as written and couldn't be better. The chiles really make the recipe. Don't leave them out! This recipe is definitely better than my favorite Mexican restaurant's rice.

Scalloped Oysters

This recipe was very good, but next time I will know to make a few alterations; the bread crumbs could be completely eliminated and replaced with crackers. They really took away from the overall texture. Also it was very dry - next time I will add a little more milk or cream.
