Roasted Garlic Mashed Potatoes
These were a hit with the boyfriend, and I enjoyed them as well. There was no milk in the house...or a potato masher...so I did the best I could. I'd say a great job actually for mashing 4 large russet potatoes with a fork! I substituted a generous 1/4 cup sour cream instead of milk and added some weird fake butter stuff my boyfriend had in the fridge. The garlic head was small, but the flavor was good as I added some seasoned salt too. Overall, easy and yummy...a winner!

Rosemary Chicken with Orange-Maple Glaze
This was a big hit with the meat-eating boyfriend. I say this because I am a non-meat eater, so I will just have to take his word for it. It was easy to prepared and I followed the recipe almost as written, however cut the chicken into bite sized pieces so I could figure out (to the best of my vegetarian ability) when they were cooked. This substitution was welcomed by the boyfriend, as he didn't really know otherwise. I served this with roasted garlic mashed potatoes and steamed sugar snap peas. I got a request to make more for tomorrow's lunch with the leftover smashed potatoes, and of course, I obliged :)
