great dish. made this twice in a week (majorly expenisve), but I wanted to test the original recipe and then make the suggested changes. Both were GREAT! Changes made = clam juice instead of water & wine, red pepper flakes & fresh shaved parm cheese on the top after plating. great dish

Oyster Sauce Chicken

I do a lot of asian style dishes & this one was right on** In order to help with the smell, add a teaspoon of minced fresh ginger. Filippinos use ginger with chicken adobo mainly to help the smell and the ingredients in this dish are similiar to adobo. Also, add some thinly sliced onions & extra garlic.

Spanish Rice II

great base for spanish rice. i did change it up a little by not adding the canned tomatos. i put one tablespoon of tomato paste & browned it up with the rice, onions & peppers before adding the liquid. i also used a little less water, so the rice would be fluffy. once rice was cooked, about 25 mins..i took it off the heat & let it sit (without opening the lid) for about 10 minutes & then fluffed it with a fork. came out perfect.

Slow Cooker Spicy Black-Eyed Peas

very nice..i made a few changes. instead of just throwing everything in the pot, I fried up the bacon with onions, hamhock, celery, peppers and all of the seasonings..then once browned up, I added the chicken stock (3 cups), let that simmer for 20 mins ..placed the beans in a crock pot, poured the mixture over the beans and set on high for 3 hours. it was great.

Kickin' Collard Greens

this is a standard southern way of making collards. for those who don't know (if u get them fresh) take the stems out, stack the collards on top of each other, then roll them, then cut. for sure, more bacon and brown sugar is needed.

this is fantastic..i read the reviews & added pretty much everything from, potatos, red peppers, carrots, peas, hot peppers, cayenne..the works & it was amazing. simmered uncovered for 45 mins, oil & curry powder for 10 mins (u guys really know what u r talking about!!)husband can't wait til I make this again :) thanks ROMA
