Crispy Gingersnaps

Just fixed these yesterday. Followed the recipe but added a touch of cayenne for added snap. Excellent recipe. My husband does not usually like gingersnaps but he loved these and wants me to make them again! Thanks for the great recipe!!!!

Chicken Scallopini

I have made this several times. My husband absolutely loves this! You can find the demi glacé at Amazon. It comes in a tub and lasts forever when kept in refrig. The brand is called More Than Gourmet. They also have a chicken stock in a tub and this is all I use now. It is absolutely delicious. Can't go wrong with either one of them.

1970's French Strawberry Pie

Hi! This is like my mom's recipe from '70s. The mashed mixture of cooked strawberries isn't suppose to be smooth. This is different from the packaged strawberry glazes that you can buy. A little more rustic I guess. After the glaze is cooked, it will look like strawberry jam. Hope everyone enjoys this pie because I sure do!

Cheesy Baked Grits

I will never again make grits using milk. Didn't like the taste of the grits. Prefer using water or chicken broth.

Mexican Rice II

I love this recipe! I have fixed probably 10 times and it is always fantastic. I add extra cumin because I love the flavor. Very easy to make. I have made it with extra tomato sauce but like it better with the recommended amount. Going to fix today!!!

The Best Red Enchilada Sauce

Actually got the sauce all made and totally forgot the oil. I think it will be fine without it. It tasted great after it had cooked. Going to use it in the cottage cheese chicken enchiladas on this website. It is better than an enchilada sauce that I usually use off of website. I will be switching to this recipe from now on when I need red enchilada sauce. Thanks for the great recipe! Don't use canned red enchilada sauce, make this instead!!!
