Eggplant Parmesan II

This was wonderful. I also salted the eggplant and sliced mine about 1/4 inch, but in hindsight I would have gone a little thinner.

Quick Peanut Butter Cookies

These are THE BEST!!! So peanut-buttery and sweet! I've done them plain, and also with mini-chocolate chips. After rolling them into balls, I press them down with the back of a tablespoon to make a wells and fill them up with min-chocolate chips. They are SO good. This is my favorite PB cookie recipe!

Kathy's Delicious Whole Slow Cooker Chicken

This is a tasty, succulent recipe. I noticed I had run out of Worcestershire Sauce (very angry at myself lol) but it was still great - substituted garlic powder because I had no more fresh garlic either. I also sprinkled some cardamom, coriander, and ginger on the chicken. We devoured that chicken.

Apple Strudel II

The first time I also had a hard crust, but I followed the advice of another reviewer, rolled it thinner and added at least 1/2 cup more melted butter. It was perfect! I wish I had used tart apples, but the filling is just so delicious. This makes a lot of strudel and my husband loved it so much he at half of it himself!

Janine's Best Banana Bread

FINALLY, a banana bread that works for me! This is the BEST I've ever had. I substitute 1/4 cup of brown sugar for white, and add some chopped walnuts. I've always had a problem before with banana breads being mushy in the middle, but not this one, it's PERFECT.
