Pad Thai

The flavor ingredient proportions were way off; using the instructions as stated, it was way too sweet and wayyyy too fishy. Next time I will use the recipe that uses tamarind paste and I will shell out for it despite it being hard to find. I added soy sauce, three times the amount of white wine vinegar, some peanut butter, and water and let it simmer for a while to let the flavors either mellow or blend better.

Slow Cooker Pumpkin Steel Cut Oats

Target didn't have steel-cut so I used 'old-fashioned' which I assume means rolled. Also, I'm poor so I didn't want to shell out for a different type of brown sugar than the regular stuff I already had. Turns out, both are necessary; I ended up with brown sugar soup in the morning, in part because of the functionality of the crockpot which is overly hot.

I am so happy to see a recipe that doesn't require a bagillion onions. That and it's tasty and satisfies my friends' varied diet preferences.

Dijon Chicken Salad

This is absolutely delicious. I'd go with fewer grapes though as they tend to fall out if you eat the salad in a sandwich.

Easy Broccoli Quiche

You really, really, really don't need as much onion as the recipe calls for. Also, it's much better if you don't add butter to the egg mixture and use olive oil instead of butter to sautee the vegetables. Also, I'd say use a different kind of cheese that goes better with broccoli like plain Gouda or like the quiche Lorraine, some Gruyere.
