Kris' Lentil Sausage Soup

This came out great! Instead of canned tomatoes I used three fresh tomatoes largely chopped and I also added some fresh chopped cilantro, a large cubed red potato with the skin on, thyme, cumin and about a teaspoon of crushed red pepper flakes. 10 minutes before it was done I added a few cups of fresh spinach.

Tomatillo Salsa Verde

The recipe came out amazing! This was probably the fifth or sixth recipe I've tried, and this will now be a staple! I usually pick the hard recipes that require roasting the tomatillos and different kinds of peppers; I never imagined such a simple recipe could be so good! *Side note, I don't know if I used a serrano, I just picked a random pepper in our garden, lol. I also squeezed 1 lime and added tsp. of sugar. Oh, and used garlic salt instead of regular salt. Also, for convenience I used a hand blender in the pot I used to boil everything. Thank you for such an easy, yet great recipe!!

Baba Ghanoush

I did not care for this recipe!! I followed the directions perfectly and.... I didn't use a traditional large eggplant, instead I used small stripped purple ones, that could be what was wrong. The baba lacked that traditional, yummy, smoky taste I'm accustomed to.

Stuffed Green Peppers I

Huge hit, even my dad who wont eat bell peppers (because they give him heartburn) ate all of his! I did make a lot of changes so I could use up some ingredients we had at home, but it was still delish. I used a large can of whole tomatoes & all of the juice (about double of what the recipe calls for) and substituted raw chicken sausage without the casings (defrosted it and few days ago & needed to use it) for the ground beef. Also, instead of the cheddar I diced up and stirred in three deli slices of provolone, next time I think I might add one more slice. We will definitely make this again!

Authentic Kicked-Up Syrian Hummus

My dad said "it tasted like the real thing", lol. It came out great!! I followed the recipe exactly as the author wrote it, then slowly added some of the reserved liquid from the can to thin it out some. I also rinsed the beans very well before blending them- something I recently learned from weight watchers, helps you add less salt. I removed 2/3 of the hummus, and then added some fresh mint per the author's suggestion- and it was really good! Went great with sliced up cucumber.
