Traditional White Bread

Excellent bread. I make all of our family's bread and this is the recipe used. One word of caution for beginners, find a video on kneading and follow that. I started using the dough in place of a heavy bag and my bread came out dense & flat. One of the "biggies" in ensuring a successful loaf of bread is proper kneading.

Twice Baked Potatoes II

Easy to make and very tasty. I bake the potatoes at 500 degrees for an hour, this insures a crisp skin that is easy to cut and maintains it's shape well. In my opinion, the time in the oven isn't as important as the crispness of the skin. If you run a fork into the tater at the end of an hour and the skin is still soft, bake it some more. Let's face it, baked potatoes are fairly idiot proof as regards over cooking! Bon appetit!

Chicken Soup III

I'm not a big fan of chicken soup but this was definetly a "keeper". Look out for the small bones though, they can be hard to winnow out.

Vanilla Ice Cream IV

Difficult for me to review this one as my children wouldn't comment on it. They were too busy inhaling it! Easy to make, since I have a 2.5 capacity ice cream machine I found myself making two batches with the recipe as written. Very much a "keeper" though.

Good, not great. There were so many reviews that advised various modifications to this recipe that I just made it as originally called for. It came out just fine. Don't reinvent the wheel on this one, it's satisfactory as is.

Chocolate Chip Pancakes

I use this recipe everytime I make pancakes. The only modification is leaving out the chocolate chips. With pancake syrup there's more than enough sweetness to go around. For other beginners, I recommend letting the batter sit off to the side for about 20-30 minutes after mixing it up. The resulting pancakes are really fluffy.

Eggplant Parmesan II

Too many modifications were needed to make this work, thats why only three stars. Only 2 eggs? I needed at least double that number to adequately coat the eggplant slices. I also kept the slices in the skillet for double the time called for. Other changes were personal, (such as more cheese than the recipe states), and shouldn't be seen as necessary. Once the changes were made it was a great dish.

Chocolate Surprise Cupcakes

Great dessert. Just remember to chill anything not immediately eaten. I didn't and discovered the hard way that cream cheese will go bad pretty darned quick. I also add the cream cheese mis about at the half way level in the muffin cup and then fill to the brim with the cupcake mix. When done properly it makes for a nice surprise as the filling is completely hidden.
