Peanut Butter Cup Cookies

Great. I found the dough easier to work with after chilling it in the reefer for about 45 min. I also gently twisted the cookies from side to side in order to free them from the pan. My three cookie experts gave these an enthusiastic "thumbs up". I'll definetly be making more of these.

Hearty Vegetable Lasagna

Very tasty but I don't see how it qualifies as a vegetable lasagna when the only veggies are the onion and pepper. Whatever. I liked it and of my three picky kids, two ate it with no problems. Number three informed me tonight that she "doesn't like lasagna with cheese in it". The girl is going to drive me crazy. All in all, a good recipe worth keeping.

Brown Sugar Meatloaf

Easy and well suited to adjusting as necessary. It tasted a bit bland but that may be due to not having Saltine crackers and substituting goldfish crackers in their place.

Oat Whole Wheat Bread

It's dense. If you're looking for a light, fluffy bread this isn't for you. I liked it, would recommend grinding the oatmeal in a blender or coffee grinder as others have suggested.

Oyster and Cornbread Dressing

A good recipe, the only reason I won't give it 5 stars is the taste of oysters was overpowering. I recommend less than the recipe calls for. Other than that, this is a keeper.

Chicken Enchilada Casserole II

This was excellent. A bit of background: I make my own chicken broth, using 4-5 lbs. of gizzards per batch. I HATE throwing them out when done but have you ever tried eating that many gizzards? It gets real old, real fast. So I purchased a meat grinder, put them through and then used about a pound in this recipe. Everybody LOVED the result, even my three children aged 5, 7 & 8. Definetly a keeper!

High Temperature Eye-of-Round Roast
