Pizza Dough II

We made 2 large rectangle pizzas on cookie sheets, turned out great. I used 3 cups wheat flour and 3 cups white flour and the recipe held up great.

Fluffy Pancakes

Very fluffy! The batter was very thick but cooked up light. I doubled and added chocolate chips to last few I put on griddle, yummy.

Lori's Famous Crab Cakes

We really wanted salmon cakes tonight so we cooked salmon before incorporating and used that instead of crab. This was great, not as basic as most of the salmon cake recipes, but not so extravagant that it couldn't be done on a weeknight.

I was looking for something to do with some tomatoes and jalapenos from our garden. This recipe hit the spot. I'm pretty sure I doubled the tomato and after reading other reviews, I'm glad I did, to keep the onion flavor down. I mixed it in the blender and hubby loved it.

Brown Sugar Meatloaf

Loved the ginger in this recipe. It made up well & I think the brown sugar/ketchup is better on top, but that seems to be somewhat of a personal preference. This recipe is a great basic meatloaf recipe. Only due to my family's tastes (& trying to get my kids to eat more veggies) I added garlic, 1/2 cup celery and 1/2 cup bell pepper. I like to have the leftovers so I make it with 2 or 3 pounds of meat and increase all other ingredients accordingly and make it in a casserole pan.

Flan III

This was a very good recipe. I don't keep orange liqueur or vanilla beans on hand, so I replaced those with vanilla and lemon extracts and it still turned out very tasty. I would not recommend baking only for 45 minutes. Even using ramekins, we had to bake the full 60 minutes for them to set. The top may seem "set" after 45 minutes but the base could still be fluid. The eggs make this flan not as heavy as some of the richer flan recipes, but subsequently, it's not as smooth, which is okay, the flavor is still good.

This recipe is a great staple. I hate the stuff in the can and making it from scratch doesn't take that long. The only thing I added was a little bit of ginger for zing, but it would have been a hit without this.

Cheese Garlic Biscuits II

We had these tonight with spaghetti. They were pretty good. Like some other bakers, I just added the cheeses I had on hand (cheddar & mozzarella). I wasn't a big fan of the garlic on top of the biscuit uncooked, even with garlic powder mixed with dry ingredients. Next time I will mix the garlic in with the cheese and milk. All around, pretty solid recipe & quick when you don't have garlic bread or other breads to garlic up.

Chocolate Cookie Buttercream Frosting

I made this icing for a yellow cake. The recipe was very flexible. Due to personal preference, I added 2 T of shortening, 3 melted squares of unsweetened chocolate squares and ended up adding about 4 T total of whole milk. Not that you have to, but I always sift the powered sugar. I beat the heck outta the frosting in my mixer for about 10 minutes and it made a very light and chocolatey frosting.

Grandmother's Buttermilk Cornbread

I have been looking for a moist cornbread recipe that is similar to the cornbread served at Black-Eyed Pea. I am looking no further. I don't usually have buttermilk on hand and the substitution of 2 T vinegar replacing 2 T milk turned out fine. My kids and picky eater husband loved it.

Delicious Ham and Potato Soup

I tried this recipe for the first time today, for the "cold" weather in Texas, a.k.a. under 70. I knew I wouldn't need salt with the bouillon, but I do wish I had read other reviews and halved the pepper. Even 1 tsp of white pepper was a little much. I added one chopped carrot and even though I forgot to add ham, it was still great. My personal preference was to use small red potatoes and not peel. I boiled the veggies and water about 15 minutes longer to get the potatoes to break up a bit. Topped with a sprinkle of shredded cheddar cheese.
