I gave this 5 stars simply because my entire family of 6 (age 11 months to 36 yrs) loved it and cleaned their plates. The picky 10 yr old asked for seconds! GASP! I didn't add the olives but only because I don't like them. I used spicy refried beans and didn't add them to the meat but instead did as others suggested and smeared it onto the tortilla as I layered them. I used probably WAY more cheese than it called for. 4 cups of colby shredded and 2 cups of mexican shreaded. We like cheese! I browned meat and added 2 packs of taco season (one mild and one cheesy), drained, added tomato, green chili, and taco sauce (mild) and simmered for 15 mins. Layered into dish, then layer of tortilla bean side down, and then smothered with shreaded cheese and repeated. When serving while still hot I added a little more cheese for the kids. I served with shredded lettuce, chunky tomato with habeneros for the husband and corn for the kiddos.
