Burrito Pie

Reviewed: Sep. 13, 2010
I gave this 5 stars simply because my entire family of 6 (age 11 months to 36 yrs) loved it and cleaned their plates. The picky 10 yr old asked for seconds! GASP! I didn't add the olives but only because I don't like them. I used spicy refried beans and didn't add them to the meat but instead did as others suggested and smeared it onto the tortilla as I layered them. I used probably WAY more cheese than it called for. 4 cups of colby shredded and 2 cups of mexican shreaded. We like cheese! I browned meat and added 2 packs of taco season (one mild and one cheesy), drained, added tomato, green chili, and taco sauce (mild) and simmered for 15 mins. Layered into dish, then layer of tortilla bean side down, and then smothered with shreaded cheese and repeated. When serving while still hot I added a little more cheese for the kids. I served with shredded lettuce, chunky tomato with habeneros for the husband and corn for the kiddos.

Easy Chicken and Biscuits

Reviewed: Jul. 20, 2010
I am surprised this recipe has received so many good reviews. I was not at all impressed. It's so bland! I added seasoning salt and it still was tasteless. It's a good start, but needs more. I'd keep looking if you're wanting a good yummy chicken and biscuit recipe.

The World's Greatest Crab Recipe

Reviewed: Jul. 20, 2010
My husband could eat all 4 lbs by himself and still want more! I only made one change and added some Old Bay Seasoning. Due to storms I ended up doing these in the oven and they were excellent! 350 4 minutes on each side, brushing with the mixture each time. Then 5 minutes on HIGH broil and added the Old Bay. YUMMY!!!! They were so good!

Slow-Cooker Barbecue Ribs

Reviewed: Jul. 11, 2010
This was the first time I've ever done ribs in a slow cooker. It won't be the last!! My husband said it was the best thing I've ever cooked. I followed a few of the other reviews and did 1c bbq sauce (Kraft Hickory Smoke) and 1c ketchup instead of 2c ketchup. I also added roughly 1 tsp of Liquid Smoke. I was generous with fresh ground pepper, salt, and garlic powder on the meat before placing in the oven. The ingredients combined to make a wonderful sauce. I used 8 nice sized country style bone in ribs and the mixture was exactly the right amount to cover the meat and cooked wonderfully. I moved and turned the pieces a few times during cooking just to make sure it all cooked evenly. Cooked on low for 6 hours and the last 20 minutes I turned to high and set the lid ajar so the sauce would thicken a little as recommended by another review and it was perfect. I served with fried fresh garden squash and slow cooked green beans. It made an excellent meal. Will certainly be making these ribs again!

Barbeque Chicken

Reviewed: Jun. 6, 2010
WOW! Best BBQ chicken I've ever made. The only thing I did differently was instead of making the marinade I had a bottle of store bought Lawry's Caribbean Jerk Chicken marinade. After soaking in the brine I poured it out and combined chicken into one bag as directed and 1 bottle of the marinade was plenty. I used Sweet Baby Ray's Sweet Vidalia BBQ sauce. GREAT flavor!!
