About this Cook
I am a professional artist and am learning photography. I'd like to teach at a college level someday. I have much to learn and have learned much in my life. People say I am quite funny and interesting. I have an interest in cultural anthropology. I am not sure I will ever stop learning at a college level. I love nature - camping, outdoors all of it.
My favorite things to cook
I like soups, meat dishes, desserts and Indian food. I love Italian and some Mexican. Any kind of meat served in almost any way. I have a real penchant for experimenting with spices and seasoning. I am starting to get pretty good at it. I like making creative salads and interesting mixtures building on things I like. I love to cook for those I love...
My favorite family cooking traditions
Sitting around the table at my Vermont Grandmothers house making jams/jellies, pickles, pies, canning tomatoes and green beans and cooking just about everything. We grew almost everything there even the meats.
My cooking triumphs
Soups and many of my own recipes. Adaptations of recipes passed down to my Vermont grandmother from the time of the early settlers in the USA. Making my own variations on local cajun recipes I have fine tuned over the last few years. I am proud when people love my cooking. I work hard at it!
My cooking tragedies
Pie crust and my first attempt at homemade bread. (I was 17 forget the salt and had outdated yeast, it was a ROCK.)My first attempt at candies was awful because I thought I could get away with not having a thermometer.

Mind Eraser
This is excellent! I used to tend bar and this was the recipe I used. I liked club soda instead of lemon-lime soda as it isn't as sweet but this way is quite good and it packs a punch!!

Black Beans and Pork Chops
I loved this! I made mine with low fat mushroom soup, added some frozen green peppers, used Medium Chunky Salsa, stirred and served over rice with shredded cheddar on top! IT was fabulous! It had a mild zing, tasted great and my fiance who isn't a huge Tex-mex fan gave it 9.5 out of 10 stars! I used 4 pork chops and increased the salsa.

Beth's Spicy Oatmeal Raisin Cookies
This is a good basic oatmeal cookie with spices. I had to change it up a bit. First I can't have that much clove so I cut it in half. I love the taste of cinnamon and vanilla so I doubled those amounts. Make sure you fold in the oatmeal as it simply isn't as good if you beat it with a blender. It crumbles up the oats until they are fine and it is not a good consistency. I added chopped walnuts to mine. About 1 cup and they came out delicious though I often make them without nuts.
